Hi, first of all - thank you for your videos. I know they were made quite a while ago but they are still the most helpful videos I've stumbled across so far. I'm struggling to get my batter to the right consistency and am currently getting the "donut balls" you mentioned. Is it possible to add water to the batter mix while it is in the hopper or is it better to just write off that batch and make another?

rather than water, just add more buttermilk. I would take it out of the hopper to mix it in though. Balls are usually the cause of oil temp being too high.

At 14:00 in your video you mentioned that donut balls are likely caused by either the oil being too cold or the batter being too thick - now you say the oil is too hot? I'm so confused right now... I'm gonna blame them on the machine being "finicky" at this point while I figure it out :p

more buttermilk- but just a little. You don't want this batter too thin, more like a cookie batter than a cake batter. You want it to drop with gravity- but drop slowly.

I have the machine and the counter switch rotation is off. It doesn't stop at the counter switch when it should, it goes past the point that it should stop at. Do you kow how to adjust that?

Ours does that occasionally. It's a setting on the machine if I remember right- you can have it set to drop 1-3 doughnuts at a time and sometimes it gets stuck at a half way point. One of the finicky things about the machine that takes experience to learn.

About 45 minutes to an hour- but it also depends if your using liquid oil or if it's set up. Set up takes longer to melt then get to temp.

You can use them for other recipes such as meringue, omelets, etc. or feed them to the dogs, or throw them out.

Honestly I don't remember.... it would depend on the size of the batch and how strong of flavor you want. I'd say about 1 1/2-2 cups for one batch, you may need to add more flour if the add in is runny in order to thicken up the batter more.

What temperature do you put on your machine to make the donuts?

So the dial on our machine I believe is in Celsius instead of Fahrenheit. I think it's like 210 on our dial maybe? If you use a thermometer to check the oil temp I believe it's supposed to be around 375F, but like everything with these machines- it's trial and error. If there's a breeze it will alter the temp, Summer vs Winter will alter it, etc.

Thanks for the info. We want to start a small business selling mini donuts. The lil orbits machine is very pricey. There are much cheaper ones on Amazon. Is there a brand you recommend. Wondering if I should invest in the more expensive machine bc we work high volume shows.

This is the type of machine we purchased. amzn.to/45T6Eil Unfortunately it is very finicky and has a large learning curve, even then we still have issues with it. Make sure you have a food truck/trailer as any slight wind will effect your oil temps.

I'm not sure why it wouldn't get up to heat. I would check all the connections, the power source, and make sure it's not clogged anywhere. Hope it gets working for you soon!

I don't really have a specific order things get added, I just go down the recipe and add them one by one. I suppose I usually add the buttermilk last so I can determine if it needs a little more or less.

You clean the hopper like you would any mixing bowl. Where the oil is it's a little trickier- you have to drain the oil out while it's hot into a heat safe metal bucket (we used a oil filter so we could reuse the oil) then wipe down where the oil was on both levels. We usually purchased a 35lb bag in a box from webresturant and I believe it took the whole bag. We have also done the large jars from Costco and I think it took 5-6 of them if I remember right. You can reuse the oil (get a heat safe bucket & filter) and it has a decent shelf life, so it’s always best to have too much on hand than not enough.

I recently made this mixture but divided it by 3. And it came out incredibly thick. With your cup measurements and it saying 10 1/2 cups flour. Is this sifted flour, and what would bethe grams equivalent? Thank you.

The thickness will depend on if the butter is melted, the size of the eggs, etc. You can always add more buttermilk to the desired thick/thinness. idk grams- google would be a good resource there.
