In a nutshell: Clear ice has less oxygen bubbles, because it is made with distilled water (not with tap water) and was frozen slowly over a longer period of time. It also melts slower, so it doesn't water down your drink as fast as white ice and has no "burned" ice flavour.

mostly aesthetics, maybe it melts down a bit slower

@@AIDSNESS This is not necessarily true. You can make clear ice with tap water, and cloudy ice with distilled water. The main thing is the way you freeze it: when you use ice moulds the water freezes from the outside to the inside, so all the impurities are pushed to the centre and stable ice crystals do not form. When you freeze ice as a block in an insulated environment, ice will freeze from the top to the bottom, so all the impurities get pushed to the bottom. Okay, and now you say, "yeah, that's why you use distilled water, because it has no impurities". You're not entirely wrong there, using distilled water helps making better ice, but you have to understand that even distilled water can have tiny air bubbles which will act as nucleation points and result in bad ice. The trick is really the way you freeze it.

Pro tip - chill the glasses beforehand, then you won't have to use ice, saving you, and us time.

They're well aware of it, it's just a staple of Japanese bartending to chill glasses on the spot.
