Yes you can do this with either two catdusa boxes or two Catdusa CT-MFs.

Quick question: as these can run channels on an analog mixer, can these also feed a house and stage monitors? Or just channels?

Yes, you can treat these like you would an analog xlr cable.

How would I set up 2 of these for a small recording room? I want 1 channel going to the dead room(talkback etc), and 3 returning (2 sm57s for gtr and 1 condenser for vocals). Would one box be in the recording room and 1 be in the control room? If so would I just connect input to input, or input to thru?

You would place one in each room. One would be connected with the In and the other with the Through. You could use these or two of the CT-MF. Those are a fan style snake, also with 4 channels and the jacks can be flipped between male and female connections per channel.
