Aunt Eileen’s Sour Cream Cake - This recipe is ridiculously easy and SO GOOD!
This is one of those quick cake recipes that lives on the side of our fridge... it's an easy cake to make after supper or for a pot luck / bake sale. Julie's aunt wrote out the sour cream spice cake recipe for Julie years ago and it was a regular bake in our kitchen. Some people call this an easy chocolate chip cake recipe or easy cinnamon coffee cake, cinnamon sour cream cake. Doesn't really matter what you call it, the cake is eaten before you can decide.
Ingredients:
90 mL (6 Tbsp) butter
250 mL (1 cup) sugar
2 eggs
325 mL (1⅓ cup) flour
7 mL (1½ tsp) baking powder
5 mL (1 tsp) baking soda
5 mL (1 tsp) cinnamon
250 mL (1 cup) sour cream
250 mL (1 cup) chocolate chips
Method:
Pre-heat oven to 180º C (350ºF)
Grease a 9"x13" cake dish
Combine and cream together butter, sugar, and eggs (reserve 1 Tbsp of sugar for sprinkling later)
Combine dry ingredients
Combine dry ingredients with the butter mixture in 3 or 4 additions, mixing well each time.
Mix in the sour cream
Pour batter into prepared cake dish and top with chocolate chips and sprinkle on reserved sugar.
Bake for about 30 minutes - or until cake tester comes out clean.

How funny about the recipes on the side of the refrigerator! I took down a stack held together with a paper binder a couple of months ago. They were starting to fade from the sun. 😊 That would be a cute title for a cookbook "Recipe Collection from The Side of The Refrigerator." I just finished copying the recipe. I love this because it just has basic ingredients that you don't have to search Amazon for. Thank you.

Sour cream is magic - I use creme fraiche for everything (what I think might be our direct equivalent to sour cream breaks when heated, but creme fraiche is perfect). It's great in cakes (it makes a brutally good chocolate bundt cake), it great for dips, it great to dollop on to a stew or soup, it's an instant sauce (just fry up a protein and some veggies or whatever, season however you like, dump some creme fraiche on and you've got dinner)... I'm definitely trying this cake and hopefully adding it to my creme fraiche repertoire soon 👍

I made this yesterday. I added 1/4 tsp. table salt and 1 tsp. of vanilla. It was really good and resembled a coffee cake in taste. I baked for 28 min. at 350F. It was a bit dry but my oven is a bit fast. If I make it again I will start at 25 minutes. We went to some friends’ house for dinner and they liked it also. I'd suggest 1/4-1/2 tsp salt (depending on salted butter or not), not 1 tsp for the quantity of flour and sugar and butter in this recipe. If you go to 1 tsp I'd expect it to actually start tasting salty. One time I made banana bread without the 1/2 tsp salt the recipe called for and the taste was so comparatively dull to what I was used to that I instantly knew that I'd forgotten an ingredient. The salt from your butter in this recipe probably prevents that from being the case. I bet if you made it with unsalted butter you would notice the difference.
