The Simple Recipe You Need: Carrot Cake For Two
Sometimes an entire cake is a bit much - especially if you have a small family or want 'just a taste'.
Today Glen cooks this super moist carrot cake with cream cheese frosting just enough for a taste, and not so much that you're eating it all week. Or feeling horrible because you ate a full size cake in one sitting. Glen bakes this carrot cake for two using the mayonnaise method of emulsifying the egg and oil together first... so this is a mayonnaise carrot cake recipe.
Yields 1 - 6" cake.
Ingredients:
Cake:
60 mL (¼ cup) neutral oil
60 mL (¼ cup) white sugar
60 mL (¼ cup) brown sugar
1 large egg
2 mL (½ tsp) cinnamon
2 mL (½ tsp) nutmeg
¼ tsp (1 mL) allspice
2 mL (½ tsp) pure vanilla extract
125 mL (½ cup) packed grated carrot
125 mL (½ cup) flour
2 mL (½ tsp) baking powder
60 mL (¼ cup) chopped pecans
Icing:
85g (3 oz) cream cheese, softened
30 mL (2 Tbsp) butter, softened
90 mL (6 Tbsp) powdered sugar
2 mL (½ tsp) pure vanilla extract
Method:
Preheat the oven to 180ºC (350°F).
Grease a 6" round cake pan.
Whisk together the egg and oil.
Whisk in the sugars, cinnamon, nutmeg, allspice and vanilla and beat another minute.
Beat in the carrot until well combined.
Combine the flour and baking powder then stir into the carrot mixture until just combined.
Stir in the pecans at this point or save them for the icing… up to you.
Pour the batter into the pan, and bake for about 25 minutes.
Allow the cake to cool completely on a wire rack before icing it.
Icing:
Cream together everything until light and fluffy.

I've been gradually increasing the amount of carrot I put into my cakes over the years. I recon that the ratio in a standard cake today has been brought way down from when you wanted to extend a batter with a cheap root, and I've found I really like even triple the called for carrot weight. Have to wring it out a touch because otherwise it's just too wet, but it means I can let myself have an even larger slice because it's obviously more healthy. Tasty too, which is the important bit

My grandmother used to say she had a secret method making her carrot cake. Turned out she tired of grating the carrot so she switched to using carrot baby food. What you got was the most moist carrot cake I ever had. Delicious!

Had a friend years ago confess that this was the secret to their apple cake was baby food. I've never thought about it being used in other cakes.

Good reminder. There was a while there that baby food was all the rage in baking. I think it at the start of the fat free craze and was a substitute for oil in cakes and muffins.

Ginger is really good in carrot cake. My husband really loves ginger, so I add both ground ginger, plus grated fresh ginger. That's his favorite birthday cake.

Ever since your first Cake For Two recipe, I've been making it and it's a favourite! I've used apples, bananas, pumpkin, raisins... it's such a versatile little cake and the size is perfect for us. Can't wait to try carrot!

When my youngest daughter was 8 she used a packaged mix to make gingerbread. She read 1 1/4 cups of water as 11/4 cups of water. She baked it an hour and a half, until the toothpick came out clean. Cook time on the package was 20 to 25 minutes. What she ended up with more of a ginger pudding. It was still tasty and we ate it all!

Wow! Thank you for letting us know about the sugar mistake. I did the same thing sort of when I recently made a carrot cake and I couldn't figure out why it did that. That is exactly what I got too.

I have a kid who can't eat dairy or cane sugar. Somehow, I stumbled upon blending egg with oil then adding my honey or maple syrup to this. Then the oatmilk. Then I add any fruit or nuts I am using and the dry ingredients. I have used this as a base for apple cinnamon cake, chocolate cake, carrot cake, white cake, ginger cake. It's all in the method...Right Glen ;-). No measurements, just going by heart and feel. Yes, sometimes it fails...but sometimes I create something incredible I can never reproduce. This method almost always works for me.

High school Home-Ec....Mayo cakes, sauerkraut cakes, sour cream cakes. If my teacher could think it up, we baked it. Funny thing is I don't think she did. I'm pretty sure she got her recipes from outside the classroom requirements. In case you are wondering this goes all the way back to the mid 70's. I'm still searching for the lemon souffle recipe we made back then. I lost all of my school recipes when I moved out on my own. By the time I got back home to look for them they were gone. We made one heck of a pizza sauce too. So yeah, mid 70's home-ec. lol Enjoy!!!😉

As per the recipe, I baked it for 25 minutes at 350F. It seemed finished when it came out of the oven but once we ate it, it clearly wasn't cooked enough. It might be my oven. Next time I'll bake it longer, for sure. It tasted very good, just not cooked enough. I'll be making it again because it is good.

I made carrot cake yesterday using a similar method. Next time, try making the cake in the blender up until the dry ingredients (beat the eggs, drizzle the oil, add chopped carrots, the spices and sugars(. Then transfer to a bowl and mix the dry ingredients along with the pecans. Make some chocolate sauce (500mL milk, 3 tablespoons sugar and cocoa powder, cook it until it reduces by about half or use a cornstarch slurry then whisk 3 tablespoons of butter) or a loose brigadeiro (1 can condensed milk, 1 tablespoon butter and 2 tablespoons cocoa powder, cook it on a very low heat until it becomes fudgy) for a Brazilian version of the carrot cake.

Though I don't do everything on the blender anymore after some cases of overmixing leading to rubbery and tough cakes. Great video by the way, very interesting to see how the video format changes over the years.

Sounds yummy. I don't think there's ever been a spice related cake that didn't make me happy. If your oven was on the fritz (or you just didn't want to heat up the oven for a 6" cake) would you even try to cook it in an electric skillet? I do a lot of things in the skillet.

I've never thought about emulsifying eggs and fats before making a cake. By the way, not sure about the fact that using butter instead of oil wouldn't work, even though quantities would slightly differ. I'm gonna try your recipe out because the result looks outstanding! ;)

@@RamonaAnne Yes, the carrot cake I grew up with (Midwest US) had raisins and pecans. I tried to like carrot cake with pineapple when I first encountered it, but really didn't like it. I was surprised because I love fresh pineapple.

Any root veg? Somehow, I don't think turnip cake would be a winner. This looks great, carrot cake is a favorite. Not being a fan of nuts in cake, I would sub brandy-soaked raisins or some pineapple niblets.

I added the 1/2 cup of raisins and a couple of heaping tablespoons of chopped pecans with a small jar of Beechnut carrot baby food to the recipe and increased the flour from 1/2 cup to 2/3rds of a cup and a little more baking soda and this turned out to be one of the most moist and delicious carrot cakes ever. Thanks for sharing this recipe. I'm going to check out all of your other cakes for two. I really like your channel. Greetings from Texas.😀
