You don't have to fly a route to set up waypoints. I haven't flown my EVO yet but I saw these instructions on youtube for setting up waypoints on the map using the Autel Explorer app: Open Autel Explorer. Click Go Fly. Click Disconnected at the top and that opens up your intelligent flights. Click Waypoint. On the top right click the 3 sliders next to waypoint and then click New at the bottom. From there you have all the options to set your waypoints on a map.

You said to pitch the camera up before starting circle mode. How does the camera know to stay fixed on the subject when it is circling?

My guess, numerical values based on an xy axis. If you get close but over the subject and create a decent radius, the math should do the rest.
