Salt and pepper chicken wings, or what we call 椒盐鸡翅, is a popular dish in Chinese restaurants. Jiaoyan is one of the 24 classic flavor types in Sichuan cuisine. Its character includes 咸香酥麻, which means salty, fragrant, crispy, and numbing. I know you have probably ordered these wings many times but what I am sharing is an authentic recipe that is different than the restaurant-made and it is addictively delicious that I can devour day and night. You will be blown away by its juicy and succulent meat. I will also explain many techniques in this video; once you learn, you can make salt and pepper anything. The crispy sound is music to ears. I can listen to it all day. Take a bite. This is the perfect appetizer for weekend gatherings, parties, or big game days.
For the Chicken Marinade
2 lb chicken wings
1 tsp of sugar
1 tsp of salt
1 tbsp of soy sauce (Amazon Link - geni.us/light-...)
1 tbsp of Chinese cooking wine (Amazon Link - geni.us/Shao-x...)
1/2 inch of ginger, grated
4 cloves of garlic, grated
2/3 cup of cornstarch
2/3 cup all-purpose flour
1 tsp of baking powder
To make the Jiaoyan seasoning
3 tbsp of sea salt
2 tbsp of Sichuan peppercorn (Product Link - curatedkitchen...)
1/2 tbsp of black pepper (Amazon Link - geni.us/black-...)
1/2 tbsp of white pepper (Amazon Link - geni.us/white-...)
1/2 tbsp of chili powder (Amazon Link - geni.us/red-ch...)
Others
2.5 cups of oil for deep frying
2 red chili, sliced thinly
2 green chili, sliced thinly
2 scallions, diced
4 cloves of garlic, sliced thinly
1 inch of ginger, sliced thinly

I love your recipes SO MUCH. And it's not just because you have such amazing ones, but because of the insights you give to cooking different dishes or using techniques. I've always struggled with frying coated things, because my coating always comes loose, so the fact you let it rest to get the flour to bond with the food is mind-blowing to me, as I've always coated the food just before I fry it. Now everything makes sense. I feel like I get better at cooking in general, not just at cooking Chinese food, by watching your videos, and it's magical. Thank you for teaching us what you know!!! (So far, my favourite recipe of yours has been the lionhead meatballs, but I can see this spice mix and the trick of coating the outside of fried foods with it maybe surpassing them). Have a great day!!!!

Mandy, Been watching you for a while and you never disappoint! I've traveled to China, 4 or 5 times over the years for business. Your recipes bring me back to those times and the foods I have eaten in China. I remember my Chinese coworkers and the hospitality they provided me (especially when we all sat together for dinner). I enjoy your recipes and as always: Love from Texas. ❤

I'm glad you spoke about thighs as an alternative. Wings have had a weirdly positive international reputation in recent years after being the throw away cut for a long time. It's good that they are fashionable as it reduces food waste but they aren't that cheap anymore.

It looks stunning and I believe this version should be on menus everywhere be it cafe, Restaurant, pub, diner, teahouse and beyond. Suffice to say that last step you mentioned is optional clearly adds a dimension. Recently saw "The Streets: Hong Kong" with Dan Hong on SBS Australia and some of the offerings by some Hong Kong institutions that are wildly popular remind of your dishes. Yours has to be arguably the best Chinese food channel on KZbin and there are some great ones. Cheers & please keep dealing in the delectable. 🙂

I made these wings last night. I actually made 2 different recipes for salt and pepper wings to compare. This one blew the other one away. The other recipe was a more mainstream American recipe and did not have the amazing flavor of this one. The all purpose flour and cornstarch combo here was the perfect crunch. The other recipe used potato starch which was an even thicker, crunchier wing, but it was actually too much. Will use this recipe and the salt and pepper seasoning over and over again.

Oh yes. I made her cashew chicken last night. As if the finest household recipe, but restaurant quality. A nephew's fiance wanted Chinese for her birthday. Could not have made better memories paired with fried rice and smashed cucumbers (also Souped Up!). I can't wait to try this particular restaurant favorite, and see how it stacks up. Salt and pepper chicken is the finest penultimate long-night-out drinking and dancing starter. Many of my best nights prove it.

I really enjoy your videos. I've learned more about cooking on a wok than any other channel. So I have a question. Could you do the first fry the day before? That would be a great time saver the day you serve them. One more thing I say with respect. Your very cute and have a great voice and spirit. Have a great day. 😊
@SoupedUpRecipes
@SoupedUpRecipes Ай бұрын
Yes, you can do the first fry the day before and double fry whenever you are ready. You can also freeze the wings after the first fry and double fry whenever youa re ready. No need to defrost, the wings will just take a bit longer to fry since they are frozen.
