Ingredients for the marinate
: 800gms whole chicken
: Salt as per taste (I used 3/4th tsp salt)
: 1 tsp turmeric powder
: 1 tsp spicy red chili powder
: 1 tsp ginger garlic green chili and coriander paste
: 3 tbsps yoghurt
Ingredients for the masala
: 2 tbsps oil
: 2tsps coriander seeds
: 8-10 whole peppers
: 5-6 cloves
: 2 star anise petals with seeds removed
: 1/4th piece of whole nutmeg
: 2 half inch cinnamon sticks
: 1/2 tsp fennel seeds
: 2 garlic cloves
: 3 byadgi mirch
: 2 spicy gol mirch
: 4-5 canacona (khola) mirch or Karnataki guntur mirch
: 2-3 medium sized onions sliced vertically
: 1/4th tsp turmeric powder
: 1 cup fresh grated coconut
: 1 inch diameter ball of tamarind
: Water as needed for grinding
Ingredients needed for the gravy
: 3 tbsps oil
: 2 medium sized onions finely chopped
: Marinated chicken
: Prepared masala for the gravy
: water as needed for adjusting the consistency of the gravy
: Salt as per taste ( I used 1 tsp salt)
: 1 tbsp finely chopped coriander
Steps
: First lets marinate chicken. Add salt, turmeric powder, red chili powder, ginger garlic green chili and coriander paste and yoghurt to whole chicken and give it a good mix with your clean hands. Keep the chicken aside to marinate for at least 30 mins.
:Then in a pan or kadhai, heat up oil. Once heated, add coriander seeds, black peppercorns, cloves, star anise petals, fennel seeds, nutmeg, cinnamon stick, turmeric powder, dried red chilies and garlic cloves and roast the spices at medium flame until you get a good aroma of spices. Then add chopped onions and saute the onions until they turn soft.
: Add turmeric powder and roast the spices in order to prevent turmeric powder from sticking to the base of the pan. Roast for a minute and then add fresh grated coconut.
:Coconut needs to be roasted until you start to get a good aroma of coconut and coco ut turns golden brown in color.
:Turn off the flame and let the masala cool down before grinding.
:Once cooled, add in the roasted masala along with tamarind and water and grind to a fine paste.
:Then heat up a kadhai and add oil. once the oil is hot, add chopped onions and saute until they turn soft and golden brown. Now add in the marinated chicken. Place a lid onto the kadhai and lower the flame to low medium and let the chicken cook for around 8-10mins.
:You can check if the chicken is cooked by simply piercing a knife into the center of one of the pieces.
:Once the chicken is cooked, add in the prepared masala along with some water to adjust the consistency of the gravy.
:Add in salt and give it a good mix. Place a lid and let the gravy come to a boil.
: At last add finely chopped coriander and turn off the flame.
:Chicken xacuti is all ready to be served with bread. Chicken xacuti also tastes yum with chapati or paratha or even plain rice.
