Fish is slit on both sides for rechad and no coconut is used.

Yes, you can slit on both sides esp if it is a fresh catch of the day. About coconut, I have seen families where coconut is not used esp in the red rechead masala. My grandma and mom always made the green rechead with coconut and I loved it.

Yes, I am a Goan and for generations my family has been Goans. Probably what you are referring to is the Red rechead masala. After a few comments I realized that folks are used to Red Rechead masala and I also have a recorded video (pending publishing) on it. Would love to get your comment on it too. If you are still referring to Green rechead masala, then I would love to learn how your mom makes it. I have always found it fascinating how even in a small state as ours how various aspects of our culture such as cuisines, dialects of konkani have adapted and always admire the richness of that diversity.

I am Goan and my mums preparation was quite similar.. My mom's no more, so big Thanks to Aajis recipes for reminding me of a recipe that would have been long gone..

@@Nerje96 Now I understand the comment better. You are referring to Red Rechead masala. In that case you are correct. I have recorded that one too and will publish probably next week. Would love to get your feedback on the other one when I publish. This particular video is Green Rechead masala and even in this one there are some tweaks that you see in different parts of Goa. The most common tweak you will see is vinegar v/s lemon/lime.

Both Vinegar (acetic acid) and Lemon (citric acid) provide acidicity (aamsaan) and act as natural preservative to the masala. Both are used interchangeably in Goa. In some homes I have seen Vinegar used more while in others Lemons used. Personally I like both, but went with lemon as that is what my grandma and mom, from whom I learnt, used in their recipes at home. I will mention that you can use Vinegar too and decide which one to go with based on your taste buds. Thanks for pointing that out Jenny.

All the way from Perne to Cancona our standard staple recipes such as hooman, kodi, sukhe all go through some tweaks and adaptations. As you mentioned I have tasted reshaad without coconut too. In our home my grandma and mom (from whom I learnt) have always used coconut and I like this taste better. Just a personal choice.

Maybe not in the red raechado masala.. But in the green rechaedo masala we definitely do.. Our green masala is very similar to the recipe posted above.

Hi Alisha, I tried this Upma recipe today. It is slightly different from the way we usually prepare Upma. I also added frozen green peas instead of the cashewnuts. It turned out great. Thanks for the recipe!

Yes they will. Prawns usually cook quickly and since the prawns are chopped into small pieces, they cook even faster

Tried this recipe today and the dosas turned out great. As crispy as regular dosas, that too without the hassle of fermentation :-). Thank you very much for sharing a wonderful recipe! Can we use goan ukdey taandul (parboiled rice) to make these? Also, for how long can you store this batter in the fridge?
