Ingredients
: 1 cup Sooji (rava)
: 3 cups milk
: 1/2 cup sugar
:1/2 cup ghee
: 2 tbsps raisins
: 2 tbsps chopped cashews
: 1 tsp kesar (saffron) milk ( 8-10 strands of kesar or saffron)
: 3/4th tsp cardamom powder
: Salt as per taste
Steps
: Heat up a pan to a medium flame and add ghee. Once ghee is hot, add sooji and roast the sooji at low to medium flame constantly for around 7-8 minutes until sooji turns golden brown.
:Meanwhile add milk to a saucepan and let it come to a boil.
:Once the sooji is almost done roasting, add sugar and salt and mix well. By this time, milk will come to a boil.
: Pour hot milk onto sooji and mix constantly to avoid sooji from sticking at the base of the pan and mix for around 3-4 mins. Then add raisins, cashews, cardamom powder and kesar milk and give it a good mix.
: At last, add 2-3 tsps of ghee to enhance the flavor of shira and turn off the flame.
:Shira is ready to be served.
