Ingredients needed for red reshad masala
: 1 medium sized charred onion (Indian sized)
: 12-15 Indian sized garlic cloves
: 1/2 inch ginger (optional)
: 10-12 byadgi mirch
: 1/4th tsp turmeric powder
: 1/4th inch cinnamon stick
: 2 cloves
: 1 tsp peppercorns
: 1/2 tsp cumin seeds
: 1 inch diameter ball of tamarind
: 1 tbsp lemon or vinegar ( completely optional)
: 1 1/2 tsp sugar
: Salt as per taste (I used 1/2 tsp salt)
: Water as needed to make a fine thick paste (I used around 3tbsps water)
Ingredients needed for masala used to coat the fish
: Salt as per taste
: 1 tsp turmeric powder
:1 tsp red chili powder
Steps
: FIrst in a mixer grinder, add all the ingredients needed for the red reshad masala as shown above in the ingredient list and grind to a fine paste.
: Then take either a pomfret, pompano or mackeral and slice it from the thicker side rather then the belly side which is much easier to slice.
: Then prepare the masala which will be used to coat the fish. In a bowl, add salt, turmeric powder and red chili powder.
: Now lets stuff the fish with the red reshad masala into the slit made. Coat the fish with the other masala made using turmeric and red chili powder.
:Now coat the fish with sooji in order to make the outer skin of the fish crispy.
:Heat up a pan and add oil. Once the oil is hot, maintain to a medium flame and place the fish onto the pan and add a little more oil on top of the fish. Let the fish cook for 3-4 minutes before you flip the fish over.
: After flipping, let the other side of the fish cook for another 3-4 mins until the outer surface of the fish turns crispy.
: You can check if the fish is cooked by piercing at the center of the fish.
: Now the fish is ready to be served.
