FOR THE MARINATING:
Mutton= 1 kg
Ginger Garlic Paste= 2 tbsp
Salt= 1 Tbsp
Red Chilli Powder= 1 tbsp
Green Chilli Paste= 2 tbsp
Turmeric Powder= 1 tsp
Brown Onion= 1 cup
Green Cardamom= 10
Cinnamon Stick= 2 inch
Caraway Seeds= 2 tbsp ( Shahi Jeera )
Fresh Coriander= 1/2 cup
Fresh Mint= 1 cup
Curd= 1 cup
Oil= 1 cup
Water= 1 cup
FOR THE RICE:
Basmati Rice= 1 kg
Water As For Needed
Cinnamon Stick= 2 inch
Cloves= 5
Mace= 2
Cinnamon Stick= 1 inch'
Bay Leaf= 4
Green Cardamom= 8
Green Chilli= 4
Salt= 2 tbsp
Fresh Milt= 1/2 cup
Oil= 1/2 cup
FOR ASSEMBLING:
Saffron 2 pinch
Yellow Food Color= 1/2 tsp
Desi Ghee= 1 cup
Fresh Mint= 1/2 cup

Tried this recipe and the result was beautiful aromatic biryani. This is the first time I have eaten Hyderabadi biryani. Mostly it has been Karachi and Sindhi biryani. Hyderabadi biryani is like full HD or 4K in comparison of other styles. Thank you for putting this recipe on KZbin. I want to express my gratitude to Chef Khursheed. Despite years of attempts, I could only master Chicken Dum Biryani and not Mutton Biryani due to the meat consistently failing to cook well. I ended up resorting to a pressure cooker. However, the chef revealed a significant secret in the simplest manner: "If it can be cooked in a pressure cooker in 15 minutes, why wouldn't it cook during the Dum process for 45 minutes?" This revelation was truly enlightening. My biryani often lost steam rapidly, as I hadn't paid attention to ensuring that the "Dum" or pressure/steam was adequately sealed. Furthermore, I appreciate the chef's insight regarding avoiding the use of Kewda and Rose water. While they can be employed, they deviate from the path of creating an "Authentic Hyderabadi Kache Gosht Ki Dum Biryani."

It's very similar to the Indian/mauritian biryani, the Mauritian normally add pre fried potatoes, the potatoes are normally pricked deep by the knife, are semi salted and slight egg yolk colouring added then fried for 5 minutes, then placed at the bottom pot together with the lamb or beef mix. Then it's all similar procedures to the hyderabadi way.

Excellent, Chef!!! I tried this yesterday and by far the best Hyderabadi biryani I have had. So simple, and relatively quick. I made it in a cast iron braiser since I don't have a lagaan. After the first dum, I thought the mutton needed just a little more cooking. So kept it on high again for 5 min and then low for 15 min. The bottom burnt. I will adjust cooking time next time. The taste was awesome! Thank you!

Chef bohot hee behtareen Biryani bani, thank you recipe ke liye! Kachche papite ka paste daalne ke bavajood gosh 95% hee gala. Agli baar, dum 10 minute zyada dein to gosh poori tarah gal jayega. Ya overnight marination se. Lekin Zaika lajawaab! Bohot Shukriya. 🙏🏼

For those who are uncertain about cooking the Mutton in quick time. Please marinate it and keep it for min 3 to 4 hours. Best would be to keep it overnight in the fridge. You just need 30 min of cooking time for Hyderabadi Mutton Biryani. But remember, it should be tightly closed, vapors shouldn't fizz out from anywhere.

Thanks for this recipe, I have tried this and the flavour was spot on, however the lamb pieces did not cook to perfection, it was only about 75% done, I guess the cooking container I have used (30cm tubular) and relatively large pieces of lamb shoulder I used (6-8 cm thick) might be the reason. But I am not giving up :) next time I will try 10min high flame, 30mins low flame and 20 min rest, see what happens!

Use raw papaya 1/2teaspoon for mutton tender n marinate for 4-6hours

@@SandeepKumar-zo4tq That's a personal choice. I hate ghee. Never ate ghee in last 30 years. In fact, I dislike dairy products because I find it unhealthy for me. "One man's food is another man's poison" is a good phrase.
