Best jerk pork video ever seen! FYI: Smoking food originated with the indigenous peoples of the Americas. The Natives used a combination of smoking and drying to preserve their food, including fish and meat. In 1655, the English defeated the Spanish colonists and took control of most of the Colony of Jamaica. After the Spanish fled, Africans that had previously been enslaved joined the Amerindian population, and some others who had previously escaped slavery in the centre of Jamaica to form the Windward Maroon communities. Jamaican food is the combination of several civilisations that met. Smoking meat and chicken is a fusion from indigenous culture passed on to Africans who used the spices and herbs found on the Island to make the seasoning. Authentic jerk comes from a long way and it is good to acknowledge what the first habitants did for the Caribbean CULTURE.

I've been to Jamaica 6 time's. The most amazing thing is you can stop a small hut in the middle of nowhere and get delicious jerk pork or chicken and an ice cold Red stripe!

As soon as I heard what was in the marinade, I knew it is going to on point. Merchants die by their marinade that nutmeg and pimento is everything. ❤️❤️🇯🇲🇯🇲🇯🇲🇯🇲

Havent tried it with pork, but! Once I made some Smoked Beef Ribs with these jerk ingredients. Added a splash of dark rum..and whew! Was it ever incredible.

Thanks for the authentic jerk pork instruction! I was just told about pimento wood and I'm assuming that's the missing ingredient for authentic jamaican jerk pork from the road side that I love having when I visit. Thanks for mentioning the tip about washing and reusing the wood. Someone said they marinade the pork with a little beer in the last hour of cooking, that might be another secret ingredient. I'm adding this to my recipe book!

I’ve tried this same marinade on a jerk chicken recipe and it didn’t disappoint. We ate on that for almost a whole week.

Love the upbeat energy in all your videos. I can tell love goes into all your dishes. Bless up empress! Where do you get your pimento wood? I've only seen one company that sells it in the states but it's expensive and some of the reviews say it's not true pimento.

Honest to God I don't eat pork but one time I ate a small piece of this at my aunt's house OMG it was to die for. So I'm hearing that a little bit of pork is good for swelling only thing I will only eat a tad bit of jerk pork no other way!!

I really like the fact that you are wearing gloves, and love how you season the meat real properly, i love jerk pork, I will always but it, i love Jamaican food, but can't cook it very well, you are a very good cook, it looks ver delicious, i would certainly enjoy that with a piece of bread, lol....😀😃

Have you ever tried brining your meat(s)? I'm a Jamacican that lives in Houston, Texas. I've picked up some grilling and cooking techniques here. The Texans here put me on to a mean 'brine'. I tried it with jerk chicken and pork. It comes out soooo much better (not saying the standard way is bad).

Hi there and thanks for your vid. Was your pimento wood freshly cut or if dried did you soak it? Also, can you reuse the pimento wood after a cookout? I have also heard that pepper elder is used - have you heard of that? Finally, could you do this with chicken?

@@sheldongayle6634 Hi Sheldon, I am not in the US But you could check online and see if the wood is been exported to the US. Is not… it could be excluded. I sometimes jerk Chicken & Pork without the Pimento Wood and it was still delicious!!
