I can't find butterbur, and it's considered invasive so I can't grow it. I guess I'll have to keep an eye out for it in our asian grocery stores, or hope I happen to be in Japan during spring in the future.

From what I've read butterbur has a bitter earthy taste. It made me wonder if brussel sprouts would be a suitable substitute

Only now I am watching this..what is butterbur? Can you substitute it with something else? Miso is very versatile,the other day I used it to make salad dressing,it was nice.Do Japanese eat stir fry noodles,as the Japanese restaurant that we go to makes ramen noodles fried with vegetable for us!!

Yes, it is. In Japan it’s called “Fujimoto”. The flavor of it is so rare and I can’t find any substitute. Yes, miso is very a versatile ingredient. Is it “Yakisoba”? It’s very similar food to your explanation and so popular home made dish!

I hope you will the video on yakisoba one day.So butterbur is only available in some regions of japan and in what season? There are many vegetables only available in Japan,it all sounds so exotic!!

You're welcome! Soba which is good for "Yakisoba" is similar to noodle to make Ramen. OK! In Japan we eat "Yakisoba" through the year, but we often eat it in summer in town festival. Probably We can get butterbur everywhere inn Japan except for city and the season is between January to April. I heard it grows in Asia. I hope one day it will be available in the world!
