Ingredients for Tripoli Lamb Manakish
For the Dough (Flaky, Puff-Pastry Style)
• 1 kilo flour
• 1/4 neutral oil
• 1 tbsp salt
• 500 ml water ( add slowly as u need )
• 1 tbsp sugar
• 1 egg
For the Lamb Topping
• 1 kilo minced lamb
• 1 kilo onion, finely chopped
• 1 tbsp salt (adjust to taste)
• ½ tbsp black pepper
• 1/4 cup pomegranate molasses(adjust to taste)
• 1/3 cup tahini sauce ( adjust to taste)
• 3 tbsp yogurt
• 1/3 cup white vinegar ( adjust to taste)
Step-by-Step Procedure
Step 1: Prepare the Dough
1. In a mixing bowl, combine flour, salt, sugar, and egg
• add oil and mix until the flour resembles coarse crumbs.
3. Gradually add water, kneading gently until the dough forms a ball.
4. Wrap in plastic wrap and rest for half an hour.
Step 2: roll out the dough
Make a small ball and let them rest on an oiled tray for 30 minutes.

After you rest the ball roll out the ball with ghee and abit of oil as shown in the video .
Step 4: Prepare the Lamb Topping
1. In a bowl, mix minced lamb, finely chopped onions, salt, black pepper, tahini, and pomegranate molasses.
2. Combine well and set aside to marinate for 10-15 minutes.
Step 4: Assemble the Manakish
1. Spread a thin, even layer of the lamb mixture over the rolled-out dough.
2. Place on a baking tray lined with parchment paper.
Step 5: Bake to Perfection
1. Bake in the preheated oven for 12-15 minutes or until the edges are golden brown and crisp.
2. Remove from the oven and let it cool slightly before serving.
Step 6: Enjoy!
