🍃Pumpkin Millet
1 pack 16 oz millet
1/2 large calabaza pumpkin
1/2 white onion
3 stalk scallion
Thyme
Small piece of ginger (Use whole or grated)
Salt and all purpose seasoning
1 1/2 tsp ground Massala (Can use turmeric ingredients).
1 whole scotch bonnet pepper ( If not available to you omit it).
1 1/2 cups coconut milk( I used homemade)
2 1/2 cups water.
🍃Brown stew lentils
1 1/2 cups dried green lentils ( wash and soak for at least 1 hour or more).
1/2 large onion
2 stalks scallion
4 cloves garlic
Thyme
1/2 tsp ground allspice
1/2 large carrot
1/2 medium Cho Cho
4 bay leaves
Roughly 1/2 tbsp browning
1 whole scotch bonnet pepper
Salt and all purpose seasoning to season
2 1/2 cups water plus additional 1/2 cup
1/4 bell peppers
** Can also add tomato if you have it
Unrefined coconut oil
🍃Ketchup mixture
2 1/2 tbsp ketchup
1/4 cup water
1 tsp sugar
🍃Kale salad
1/2 head kale
2 stalks scallion
1 tsp water
1/2 tbsp Dijon mustard
1 tsp olive oil
1/4 tsp garlic powder
1/2 tsp lemon juice
1/2 tsp agave
** This salad dressing was not plan. I have an idea of the ingredients and I just mix them and adjust to my liking so you can do the same.

There’s no shouty music and no showmanship, so we can just enjoy a peaceful experience while watching. Then, when we try the recipe, we can appreciate your brilliant way of teaching. I love the way you film it, with the food being the centre of attention. I’m in the UK, and I love to try new vegan or vegetarian recipes, especially with a Caribbean flavour. You’re a *star*!

A couple of years ago I was diagnosed with IBD. Since then it's been a struggle to know what I should eat UNTIL I returned to eating the food I grew up eating: lentils, rice, greens. In other words, a plant based diet. I remain symptom free when I eat this way. I'm glad to follow this channel because I feel like I'm just going back to my roots and then I also get new ideas. Thank you for your work!

I purchased them at my local supermarket here in south Florida via bravo supermarkets, some at Walmart, Whole Foods supermarket, Presidente supermarket. etc. millet is another ancient grain/ seeds and can be an excellent substitute for regular rice.

You said you soak the lentils for 6 hours couldn’t that be done in a shorter time? because most peas and beans I soak for maybe two hours.

Jamaicans like the food to have a distinct colour and we use a lot of brown ing, aka caramelized sugar.
