Hello friends, and HAPPY OCTOBER. I hope you all are having a beautiful autumn season so far. This weekend we venture out to an apple orchard, make a homemade apple pie, and have a cozy movie night. I had really low energy while filming this video so I didn't talk to the camera as much as I was hoping to but I hope you guys still enjoy it!
Also, this video was filmed before I saw the news coverage of how devastating Hurricane Helene was for so many people. I am praying for all of those who have been effected by the hurricane.♡

APPLE PIE RECIPE
For the Filling:
Approx. 3 lbs of apples peeled and sliced
1 tbsp lemon juice
1 tsp vanilla extract
1/3 cup coconut sugar
1 tablespoon arrowroot starch
Pinch of sea salt
For the Crust:
2 1/2 cups gluten free flour (the brand I recommend www.bobsredmil...)
2 tbsp coconut sugar
1/2 tsp sea salt
1 cup coconut oil, chilled
1/2 cup ice water
Directions:
1. For the pie crust, start by combining flour, sugar, salt in large bowl.
2. Add in chilled coconut oil, and combine with whisk or mix in kitchen aid mixer.
3. Add in ice water and whisk together. Combine fully with flat spatula or hands in needed.
4. Divide the dough in half for the top and bottom layer and mold into two balls.
5. Chill the dough for one hour.
6. While the dough chills, prepare your filling. Peel and slice your apples and add to large bowl. Preheat oven to 350 degrees F.
7. Add in lemon juice, vanilla, coconut sugar, arrowroot starch, and salt. Mix together.
8. Once dough is chilled, roll out dough between two sheets of parchment paper.
9. Transfer rolled dough to bottom of pie dish.
10. Add apples to pie dish.
11. Add top layer of crust and press the edges together.
12. Optional: brush on whisked egg yolk + water to top of crust. Sprinkle with coconut sugar.
13. Bake pie for 30 minutes.
ROAST CHICKEN DINNER RECIPE
Ingredients
Approx. 3lb whole chicken
1 onion
2 tbsp. minced garlic
6 sprigs of thyme
3 sprigs of rosemary
5-6 sage leaves
2 tbsp avocado oil
Salt, pepper, and paprika
Directions:
1. Preheat oven to 375 degrees F.
2. Remove any giblets from cavity. Sprinkle inside with salt and pepper. Add in a whole peeled onion, garlic, and fresh herbs.
3. Tie legs together with butcher's twine.
4. Coat outside of chicken with avocado oil and top with salt, pepper, and paprika.
5. Roast for 55 min - an hour (depending on size of chicken) or until internal temp reaches 165 degrees.
