AUTUMN HARVEST BOWL (continued) Preheat oven to 400 degrees F Peel and chop your sweet potatoes and toss with 2 tbsp of avocado oil, salt, pepper and garlic powder. Roast for 40 minutes. Chop brusel sprouts in half and toss with 2 tbsp of avocado oil, salt, pepper and garlic powder. Roast for 30 minutes. Combine quinoa with chicken broth and cook on stove top stirring occasionally. Grill your chicken on stove top and cut once cooked. Assemble your bowls with greens of choice, quinoa, roasted veggies, chicken, diced apple, pumpkin seeds, avocado, and dressing. HONEY DIJON DRESSING 2 tbsp olive oil 2 tbsp apple cider vinegar 3 tbsp dijon mustard 2 tbsp honey Salt and pepper to taste ROSEMARY & DIJON CHICKEN MARINADE (my go to for the fall season) 2 tbsp avocado oil 2 tbsp coconut aminos 3 tbsp dijon mustard 2 tbsp maple syrup 2 tsp dried or fresh rosemary finely chopped 1 tsp dried or fresh thyme finely chopped ½ tsp salt ½ tsp black pepper
