Just an idea as I watch you make the bunk beds up - - - which I did for years for my boys - Beddy's - they are an all-in-one sheet/coverlet set that are zipped around the mattress and to make them in the morning - they simply straighten sheets and zip the side . . . much simpler and no Momma having to crawl all over the bed - LOVE watching your family work together !!!!

I loved watching all of you packing up the dehydrated apples: eat one, two into the jar. My youngest son and granddaughter gobble up dehydrated apples like maniacs. Once I have tempered a new batch in jars, I use a two piece canning lid and the jar attachment to my vacuum sealer to get a better seal. Do you ever dehydrate onions or shallots? I seal them the same way and it’s such a nice convenience to have on hand.

Haha yes. We do dehydrate green onions, I’ve only done freeze dried onions but haven’t even tried them yet we have so much fresh on hand.

I freeze dried some of my raw apple blend too! I found that blending the freeze dried mixture before I put it in jars saved a ton of space!!

I have to wonder how your fruit leather would turn out if you did a batch raw and another with pectin, then mix them. Would the desirable qualities of each temper the less desirable ones? Since you garden through the winter, just curious about what state/growing zone you're in.

Question on the strawberry plants. When you use the paper or other barrier type weed block, how do the plants propagate with runners?

They put out the runners but they don’t root, they need to be cut off. This makes for bigger plants that are more productive because they have space. It also means they need to be replaced within 2-3 years.

I can't believe how huge those trays are for your new freeze dryer. I have a medium one so those look at least twice the size. I'm wondering if those white lids are good enough for keeping your apples dry. I have found that they aren't very airtight at all.

You are probably right about the white lids! I noticed that when I was shaking a jar of liquid with a white lid, it leaked out a little. The grey ones are better. I also have a vacuum sealer for the canning lids so maybe I should switch them over to that instead.

What to do and when depends on your climate. Do you know what zone you are in? I am in 6b. I have a basic free calendar here for zone 6: www.theseasonalhomestead.com/when-to-plant-vegetables-in-zone-6/ . If you like a printed version of a planner, my sister Amy sells one but you'll want to wait a month or two until her 2024 version is available. It is super thorough and great for a beginner. I also use a digital planning tool called Seedtime. Both planners are linked in the video description. Hope that helps!

We harvested our sweet potatoes for this year and the are so light, they look ok and taste ok but feel like 1/4 the weight of a normal sweet potato… almost like it’s made out of foam? I appreciate the fact that you grow alot of food for your family and that you are teaching your kids how to be self-sufficient. However, look at your house, your land, and all the “toys” you have. Most people do what you do because they can’t AFFORD to do anything else. Count your blessings that you could stop growing food at any time and be just fine financially. Alot of us aren’t that lucky.

We are fine financially because we worked, and still work hard. It’s the result of sleepless nights, sticking to a budget, and getting out of and staying out of debt. We lived in a small fixer upper house with a tiny backyard for years so we could scrimp and save for this. There is no luck about it.

I see that 11:50 you outward wear that baby. I have to beg you to stop! You can see that poor baby dangling by the crotch. It causes endless physical problems as well as mental overstimulation. Babies are meant to look at the world through their mothers’ eyes. That’s how they develop a sense of self - when they see a baby’s reflection in their mom’s eyes. Outward wearing is terrible and I wish they didn’t make carriers that allow for that. Even if you inward carry with a bad carrier, there isn’t enough support. There should be fabric all the way to the knee for a fully supported seated position. I’m not only amazed by the amount of research you put into gardening, that’s why I admire you. The work and dedication is awe inspiring. But I’m also shocked that you didn’t put a quarter of the amount of effort into your child rearing. Hip dysplasia is a well known risk for improper baby wearing. Simple logic would tell you being held up by your groin is incredibly painful. Look at actors behind the scenes. This is a developing baby. Please get a supportive soft structured carrier! I like Boba and Kinderpack. A good carrier costs 10% of the price of a freeze dryer. I’m glad you took your older boys’ complaints seriously. Kids have growing pains all the time. I used to get back pain all the time as a kid. They say you grow when you sleep so that might be why they associate it with the mattress. I wonder if it’s from the indent that naturally forms in furniture. So when you grow, you outgrow that indent which makes your sleeping position. There seems to be an imbalance in how immediately you fixed the mattress problem with simple prevention.
