Avilu bendi | Unique Style curry by using all veggies | ಅವಿಲು | Aviyal recipe | all vegetable curry
A healthy curry which is best combo for rice is called "Avial curry". This is made by using multiple vegetables. Don't add vegetables those turn soft after cooked. For ex- pumpkins, ash gourds, potatoes etc should not be added. You have to add raw bananas, Mangalore cucumber, ridge gourds, snake gourd, bitter gourd, carrot, beans etc(these are must for this curry). Mango pieces are added for sour taste. And this curry also requires sourless buttermilk. The spice required is only jeera seeds. Green chillies are added for spice taste. Grated coconut is also an important ingredient for this curry. Structure of this curry should be thick. So it is served as a side dish for rice. And this is common in every functions of Kasaragod and D.K. It is a Kerala special curry.
