KELLY'S AVOCADO BRUSCHETTA
Serves 8
INGREDIENTS
2 Avocados
2 Tomatoes
1/2 a Red Onion
1/4 cup cilantro, chopped
2 tbsp olive oil
Juice of 1 Lime
1 Baguette
clove of garlic, sliced
METHOD:
Dice avocado, tomatoes and onion and place in a bowl. Add olive oil, cilantro and salt and pepper to taste.
Slice baguette, and drizzle with olive oil. Toast under the broiler until golden brown. Rub with garlic, and top with Avocado mixture.

my mom makes this with no onions, but adds a little japanese mayo and crab meat. they are absolutely divine. she'll also sometimes adds some raw tuna chunks, but that may be quite particular to my japanese taste :)

Not necessarily! I always eat it chopped, if I mash it it browns more easily, even if I add lemon or lime juice!
