love your videos! I'm in Singapore right now so i've been going to your hokkien mee and chicken recommendations! Regarding the exploding chicken i'm pretty sure they're "butterflying" it intentionally to reduce cooktime and have more crispy surface area? Thats my theory

yup you're right! I have since found that they do that for those reasons and also to let the "blood water" out from the deepest parts of the chicken so as to reduce the chicken stench.

If you ever get a chance, you gotta try Bonchon. I recommend getting their fried chicken with their fried rice, fries, and slaw. Heavenly (on a good day, at least)

went to try the waker chicken @ bedok(take away), it was dry, the seasoning was on point for me, but it was lackluster for my "重口味" partner. Maybe it was just a bad day, would try again to see if that was the case.

yeah it's definitely on the lighter salt for seasoning. I have had it several times after this video and I still stand by it. it probably was an off-day.

Thanks Alderic, will check out Waker Chicken. A quibble: it is steam (purely hot water vapour), rather than "smoke" (contains gases and suspended soot; thicker than steam), that is wafting out of the chicken.
