In kerala we use the entire banana flower and the inner flush associated with the flower. .We didn't boil and filter. We use this things with peas or daal with coconut ..its called chundum payarum in Malayalam. One of the most traditional curry of kerala

mouth watering recepie... The only disadvantage is it,s takes alot of time... It,s a very hard process... I feels so... i think it, has littile bitter taste... Oh my sweet mamma... We should not boil the banana flowers just add salt & curd squeez it well and wash it 4to5 times then cook it it won't be bitter all flowers are not bitter just taste it and buy

You can eat all fleshy (inner) parts including the ones that she is cleaning and discard the purplish brown petals that cover it. In my country, we usually discard the parts that she is preparing (i mean it's optional actually) but cut and cook the parts that she is discarding (or putting aside?) in coconut milk. Banana flowers can have a bitter taste if not prepared correctly. see banana blossom in coconut cream recipe

I tried this and I'm thankful I don't live in a tropical paradise otherwise I would look as stressed out as this lovely lady. Also, note how she's leaning over the induction cooker, which is placed at a very dangerous height... i don't think they are following any guidelines about how far away from her body it should be placed. She's basically hanging over it, meaning she's in teh magnetic field of cooking. Probably no way for her to articulate her discomfort. I am not surprised the Indian government has no guidelines to protect the health of women who slave over these stoves all day--they don't really think this is important. I bet she would look a lot happier if it was the prescribed length away from her body.
