I enjoyed this video very much. I've learnt that poppadoms can be fried in like 3 seconds, and the vegetarian stall which accepts any price. In fact I love all the hawkers in this video, the nice Briyani lady, the HK soup master, the nimble Indians frying their noodles and chopping the rojak. They all seem very proud of their craft, and humble with their trade. All thumbs up for them and you!

Haha.. this hawker is famous for its concentration of Muslim Indian stalls. Think more than 50%. As for the usual neighborhood estates, there's usually just around 2-5 Muslim stalls at max. Surely have lontong.. and sayur lodeh.. 😁 I'll look out for Lontong for you next time 😊

The middle lane shenton way power stall is the legendary one. Been a regular for the mee goreng(Xtra spicy, add potato) for many years and prata kosong since young like 30yrs ago.

When you said that you want to fry a whole tub of pappadom, you MUST DO IT!! I really recommend it. My whole family really love pappadom & keropok ikan (fish cracker). We often fry them on weekends, and keep it in a big container like tall plastic containers to keep em crispy & fresh so that we can reach it whenever we want it on weekdays. To save some money on chips, we opt for this method and it tastes as good as how you buy it from the hawkers. Try it!

17:20 that is Kueh lopes. I much prefer the other Indian rojak stall. And goreng pisang stall, minimum $3, no thanks. I like the Indian mee siam stall inside too, can add mutton if you want. Thanks for the biryani recommendation, will try it for my next biryani meal.

Rojak Stalls at Ayer Rajah Hawker Centre is one of the few places or only places where the rojak is fully set. These days most stalls offer what is popular hence not many choices. Gonna head there one of these days.

Regards rice on top of meat I Believe it may have two origins. 1st it’s generally a layered dish but meat, veg and rice cook at different rates in pots - so they layer it on your plate instead and 2) some Biryani have a dough cover to keep in the moisture and flavour of the meat.. covering it in rice keeps meat warm and succulent and keeps insects off. Everything in this episode looks delicious. Achar reminds me of childhood days, can't find it in US. Making a mental note to come to this hawker center when I visit SG next year. Video looks sharper and color more vibrant... upgraded camera gear or 4K?

The achar they had was almost like a Christmas Chutney.. beware of the green peppers though.. hot 🥵 As for the gear.. I've tried using cameras with wide focal range. But to have it at a low f stop means the lens is usually big and bulky. And the post editing on exposures were hard to manage. So I usually end up using my phone instead 😂 as for the colours.. I try to bring it to life.. it's really not the usual tone our eyes see.. but I realized every food vlogger is doin it to make things pop

I love it! Most of the food are around $3-6 SGD. Affordable for Singapore standard 😍 Love the Moroccan owner haha, so friendly! The hawker center kinda reminds me of the Geylang Serai Hawker on Geylang Rd.

A touch of gout, piggy? No fun at all and a tad on the painful side (understatement++). No doubt your doctor has given you the standard advice of avoid offal and take the pills. Can I also suggest you buy expensive/super supportive shoes. Brooks do some nice ones that really help. Keep up the good work. I'm taking notes for my February sojourn.

Thanks for the tip. Brooks are really good. 😅 had been having recurring flares for nearly a month which is the reason for less videos produced. May I suggest you look up Google maps on all the food centres.. there’s usually loads of pictures of food that are popular in each hawker. That’s how I do my preliminary feel of those hawkers I haven’t been to. I remembered the days of flipping and memorising pages of those annual Australian roadmaps (already 30years back).. but now there’s Google maps 😄

These are the real authentic local food. Unlike some kopitiams that employs foreigners to cook local dishes, the taste are just way off.

Couldn't agree more.. I feel very disappointed when I see more and more stalls employing foreign labourers to man the stalls.. many don't really out their heart to it. Owners are just staying home without partaking in the running of the food stall.

Hello Piggy Puggy, the food here at Ayer Rajah reminds me of those indian food vendors at Bras Basah Road. When I was a student in secondary school, I used to go to Bras Basah Road back then as it was close to the National Library, to buy indian rojak and my favorite drink was the rose syrup w/milk. Wow, the lady's briyani rice is to die for! Well about your gout, sad to tell you diet is key to healing gout. It is the result of too much uric acid in your blood and tissues. From what I can tell in your diet with hawker food, you have to stay away from meat of any kind, including organ meats, which unfortunately you like as these contain high amounts of uric acid. Plus drink plenty of water, not kopi peng or sodas...and you also have to stay away from rich, fried and oily foods until your body resumes its normal course. So if you want to heal, you have to be disciplined, it is up to you.😒😢 I myself have to stay away from rich and oily foods, and when I cook, it is low salt, low sugar, low fat, etc. OK back to hawker food! The Malay and Indian hawkers are very friendly and accommodating, so it must make your job easier huh! 😁Wow, the nasi padang ingredients and the sambal looks great, bursting with flavors. Love indian rojak...Never tried Morrocan food myself. Hokkien mee always look delicious. OOHHHHHH, V4Vegetarian, bless their heart to offer "pay forward." Big hearts with compassion and generous, true mark of a Buddhist, lots of merits to these folks, bless their hearts. I used to take a lot of yong tau fu when I was a kid, love the refreshing soup and ingredients. Hey you, maybe you should try one of the uncle's herbal soup for your gout! Love Teh Tarik, she pulled it so well until it is so foamy, lucky you. Oh yes, love that Malay snack stall. That pyramid/triangular kuih looks like Kuih Abok Abok Sago. Very good video, nicely done. Thank you Piggy Puggy...try to stay disciplined to get your gout healed.😁👍

Hahaha.. Kenna lectured on gout.. you're not a doctor right? Your school is at Bras Brasah?? 🤔 Mines there too! I'd run to Bras Brasah to buy sports equipment.. lots of mamak stalls next to mine. Don't tell me you wore that blue 🔵 Pinafore ah? 😂 Oh.. I read incorrectly.. I thought your school was near there.. I recalled that coffee shop behind the bus stop at national library.. and that pink drink is Bandung laa.. just add condense milk to bit of F&N syrup.. that's my favorite too 😂 and magnolia milk used to come in pyramid shape

I prefer Indian food because of so many varieties such as Maggi Mee Nasi and Bee Hoon combo because of fries and mutton and even Indian rojak with balls of immeasurable pleasure and even fish fillet and Tofu and even sausage and even Indian beverages. I also like the pakora sauce how to make it?

Lots of these stores came from the open hawker store operating at old location of Singapore poly beside Singapore Conference hall. That's the place to go for supper during the 80's...free parking and nice food

Ahhhh yeesssss.. finally someone who can confirm that with me. You know what? Most of the guys I asked at the stalls probably weren’t even born when it was at That old location 😂 they just kept saying Shenton Way.. when I asked .. some would say Maxwell.. some would say telok Ayer. But in my mind.. I recalled somewhere near that old building after SG conference hall.. I believe it’s now a bus terminal

@@Piggypuggy The very 1st time I ate Indian Rojak was at this place at Rex theatre. Running in parallel just beside Rex theatre, there is open air place where there are food hawkers stall. This should be in 70s and early 80s The indian rojak was yummy

Open air carparks and roadsides beside theatres back then were great supper places. The other one would be Hoover theatre at Balestier. I kinda missed that vibe.. which led me to JB open air carpark near pan pacific Puteria in the 90s 😄 there’s also the nearby A&W along the middle of Bukit Timah road.. hehe.. it’s been 50 years since

Best open air hawkers was probably the bunch opposite centrepoint and besides the big uncovered canal.

Malay Nasi Bryani don’t bother with one time customer. They gave priority to Food delivery. I got very mad with their answer when I wanted to order. “You wait until I serve all the Grab order first”. I walk away never to go there again.

With the introduction of GRAB delivery.. it’s become quite a chaos for most hawkers. It’s annoying on the dine in customers and stressful on the hawkers. But if customer feelings wasn’t taken care of.. then it’s bye bye to one less potential client 😕
