Rice Masato is very easy to prepare. Cook for about 20 minutes a cup of rice in 3 cups of hot water with white sugar and cinnamon. When it is cold, blend it and add the pineapple peel to ferment. Then serve cold and with ground cinnamon. In Colombia it is usually accompanied with a sponge cake called "mantecada".

They are very interesting dishes made with local ingredients that are probably not well known but are surprising.
