In this brewing video, we're making an IPA with Azacca hops in less than a week by fermenting in a kettle with Kveik yeast. This is a perfect homebrew recipe for people who want to make homebrew beer fast. In this case, we have friends coming into town and we want to have a beer for everyone to drink. Watch this video to learn how to make IPAs, Pale Ales, Lagers, or any kind of beer super fast. We spend time in this tutorial to teach you about how to make your water chemistry right for this style. Ideally, you want there to be more chlorides than sulfates in your water in order to make it softer and the final flavor juicier. The Azacca hops we're using in this beer have fairly high alpha acids (12%) and have a flavor profile that consists of citrus, mango, and tangerine notes. The yeast we're using to ferment this beer is very unique and is the reason you'll be able to make this recipe quickly. Kveik is a type of yeast from Norway that ferments around 100 degrees Fahrenheit (37 C) without producing off-flavors. We also learned some lessons ourselves during this brew day that you can learn from too. Oh man, I want to discourage this mentality in the nicest way possible. I get it, this is a hobby for a lot of the people watching this video, and it should be fun, and if part of the fun is being a little messy, right on. But from someone that went from homebrewer to a very successful brewer in the industry, if I can offer any advice, it's to keep things clean. There is just no excuse to be scatter brained and all over the place, dumping grain and vorlaufing upside down and losing a gallon of wort, etc. You will find that the more organized and tidy you are, the smoother the day goes, the less mistakes you make, the more you learn, and the better your beer turns out. This is especially true at the homebrew level where you have so much less sanitary processes in place. If you are messy, fine. But if you can improve your cleanliness and sloppiness, it will make your beer much better and your day a lot more enjoyable.

Diacetyl is from not fermenting a beer to completion, and in the case of lagers you have to do a diacetyl rest as well. I have a clawhammer and have had great success with it by the way! Cheers!

Haha, I had a similar issue while cleaning the 120v system. Hot water/PBW solution everywhere. I've brewed a few batches using Hornindal Kveik and have had good luck at 90 for a few days then ramp up to 95f. My latest was a brut IPA which went from grain to glass in 5 days.

Gosh Darn! thanks for pointing out that the Hornindal does not ferment quickly. I actually asked the guys at Omega when they were doing a live stream and they told me i was messing up my O2, turns out Voss is the only fast fermenter! cheers for the info.

I've always find under pitching any kveik yeast works best. It kicks it into overdrive and brings out the flavours even more 👍 also don't smoke bare zoots before brewing 🤣🤣

I have gotten that perceived "milky / chalky " off flavor when using a 2:1 CaCl to SO4 ratio. I have had much better success brewing "juicy IPAs" using 150ppm SO4 and 80ppm CaCl, mashing at 154 and adding 5% golden naked oats to my grain bill. The naked oats are actually a crystal malt which I have found to be a game changer when brewing juicy IPAs. Cheers!

Kveik is great :) You should try to under pitch. Then you get more fruit flavours. If you want to try the original kveik cultures (not the single strain) I can send you some😀🍻

You can use enzymes and break down long chain sugars and be happy with the yeast you are using. I mash only high temp and I use any yeast I like and then add enzymes if needed.

Let me give you some advice, try Kveik yeast by Lallemand, it ferments in 2 days and makes a wicked beer, especially for quick drinks

light beer :) 2 - 3 % AVB. Thanks for showing that I am not the only one who makes mistakes for time to time.... however the fermentation is the key to the taste, just giv it time.

You are thinking DMS, which is a corn flavor. It's most definitely Diacetyl, which is buttery, milky, oily, etc (not good). Basically, I fermented waaaay to warm for that particular strain of yeast (Hornindal), didn't aerate enough, and cut the fermentation short.
