From an ex-aerospace student: The elevator is also an airfoil meaning it provides lift and as such produces torque to the center-mass of the aircraft, counteracting the torque of the wings. Hence, losing the elevator makes it so that there's a moment around the center of mass and the plane tilts upwards. I assume you know that since you were in training to be a pilot but thought i'd share for anyone interested ^^
