Dear Chef Brian I am thankful for your recipe and guidance. I followed your step by step recipe and my cheesecake turn out smooth on top, taste creamy and sweetness just nice. One thing imperfect is, after 24hours in fridge, middle part of cheesecake is gooey not firm. Wonder why.

Usually is happen with baking time not enough. might from different oven the power also different, So you night have to extend the baking time.

@@BrianCuisine Thank you Chef for your advice. After 4days in the fridge, the top of cheesecake is firmer, the middle less gooey. But once I slice it, cake cannot hold it's shape. But taste is really good. Thank you.

Hi Brian, is it necessary to put that much water for baking? I do not have such depth tray so will it affect the cake results if lesser water? Thank you and I really like your sharing as easy to follow and outcome guaranteed.
