材料 :
鱼肉切丁 300 g 腌制少许 盐 胡椒
黄莉 200g
青椒 2 条
蒜头 1 粒
适量 木薯粉
调味:
白糖 适量
少许 盐
Ingredients (Diana)
1. Fish fillet 300g, cut smaller pieces and marinate with little salt, pepper and Shaoxing wine. Then add little oil and mix well
2. Pineapple 200g cut smaller pieces
3. Green chilli 2pcs remove seeds and cut thick slices
4. Garlic 1 clove cut slices
5. Tapioca flour appropriate amount
Seasoning
1. Sugar 2tsp
2. Salt little
Method
1. Heat wok with more oil. Lightly coat the fish with tapioca flour and deep fry for 2min. Drain and increase the oil temperature and re-fry till golden brown
2. With little oil in the wok, stir fry the garlic till fragrant. Add in pineapple and stir fry till caramelised under high heat. Then add in water, just enough to cover the pineapple. Let it boil and cover. Simmer for 3min
3. Add sugar and taste testing. Add salt and mix.
4. Add fish and green chilli and stir fry till gravy has reduced.
5. Add little fragrant oil and mix well
6. Serve and enjoy! 💕
