And about the animal sacrifices, yes it is a thing, in TANTRA VIDYA Or knowledge of tantra Or something like rituals... Sacrifices are believed to be holy and give positive energy towards the goal it has been done for.. It's always done to a specific deity (here, maa kaali) and it's believed that IF DONE PERFECTLY and in POSITIVE MANNER, the deity will bless the people included and the animal sacrificed gets a better bodied birth and higher level of life in it's next life

Goddess Kaali once killed a demon that took a form of Buffalo. Some tribes and kings used to kill and offer male buffalo (not cows) to goddess Kaali mata in order to get their wishes fulfilled. But this practice was condemned and abolished. Cows are very dear to Lord Krishna and many hindu demi-gods and goddess are represented by cow in Sanatan Dharma. That's why it is considered sacred and worshipped during many rituals. It is written in Upanishads (vedic texts), whoever kills a cow, will be punished by getting painful death that many times the cow has hair on its body. And Hindus considers Cows as Mother, so sentiments is also there.
