Today's adventure on the Lone Star Grillz 20x42 Pellet Smoker was one of these FAT racks of baby back ribs.... 4.8 pounder to be exact! The Lone Star Grillz made easy work of this rack and added an amazing smokiness to the ribs. Here is the recipe for my homemade bbq rub:
1 part granulated garlic
1 part granulated onion
1 part black pepper
2 parts paprika
2 parts sugar
3 parts kosher salt

Those were some awesome looking ribs. I'm not too familiar with Lone Star Grillz, but the grill looks to be great quality.

I haven’t gotten down to Goldsboro yet to visit Heritage Farms and get some ribs there, but I am going to guess that the WalMart Smithfield “Extra Meaty” BBs are THE best for the money. That Lonestar did a beautiful job.

They do look good.Do you notice much difference with smoke penetration with a heavy to a light coating of rub. Also I’ll have to try back on the grill for an hour after the foil.

No... don't notice a difference. In reality, smoke is not penetrating into the meat. It's collecting on the outside. The smoke ring is a chemical reaction and not a sign of smoke penetrating into the meat.

Good looking cook! Was that a grill level thermometer next to the ribs? If so, how did it compare to the fire board reported temp?

It's an analog thermometer that I put in when I am comparing temps... its within a few degrees of my Fireboard.
