The likely problem with your seal leak is that the hinge is bolted on so that the hinge is holding the back of the lid down too tight, thereby holding the opposite side (handle side) up slightly. Here’s how to check. Loosen all of the hinge bolts until there is movement between both hinge flanges and each half. This will let the lid sit on the kettle with no interference from the hinge. There should be no smoke leak. If there is no smoke leak, then tighten the bolts with the hinge flanges in this position. Readjust hinge mounting as needed until the leak stops with the hinge bolts tight.

I kept your comment in mind while assembling my Weber Summit Kamado this week. I centered the lid up and let it rest it's weight on the seal before tightening the bolts. Definitely no smoke leakage during my first 12 hour cook.

I tried to make it as thorough as possible to make it as thorough as possible. The tricky part is if you wait too long you end up being irrelevant because nobody cares anymore. It's a balancing act. LOL

I can't wait! Justin, first of all, another super video on the Weber Summit Charcoal Grill / Grilling Center. You are probably one of a few people qualified enough to do this video since you have owned and cooked on lots of kamado type grills/smokers. Actually, my wants for the next smoker/grill was possibly a Big Joe, but you make great points for the metal bodied Summit. You shocked my boots giving me a shout out. Didn't see that coming. That was nice and I appreciate it very much. I was taking a nap, and heard my phone notifications going off. Finally, after waking up looked at it and started seeing a lot of activity on YT. Meathead was yelling at me saying Justin had given you a big shout out and to check it out. Thanks buddy 34 new subs in the past hour and half to put me at 273. We need more Summit videos! There's surprisingly so few on YT. Have you ever done a rib cook on the Summit without the heat deflector, so you'd cook directly over coals like a PBC? I'll be getting my Summit in September and this is one of the first things I want to try.

You know, Ive watched quite a few of your videos, and I really appreciate your honesty in telling it like it is. I own a really old 18" red Kamado grill with a 16" cooking grate. Not sure what brand it is, and although it cooks really well and is easy to maintain constant temps in, I am frustrated by the lack of grilling space. I love my Weber Jumbo Joe table top, use it a lot. I think i'm gonna go with the 24" Kamado Big Joe, because like you I am not fond of BGE's lack of improvements due to their hold on the market. I wont be moving it around at all anyway, as i"m gonna be setting up my grilling station with an 8ft stainless steel commercial table to work off of beside the Kamado table I built for the 18" original Kamado underneath a dedicated shaded grilling area. Love that shade! This video along with others of your I have watched has helped me in making this decision. Didnt wont to make a $1700+ mistake here. Thankyou so much!

I'm all over the charts on watching cooking videos and especially BBQ and smoking videos. I've looked at many of your videos over the past few years and liked them but for some reason I never subscribed to your channel. Well that changed today. I was looking at several of your videos on wrapping and spritzes and then grill reviews (not technically correct but I call them all grills and I have all types). Thanks very much for your really spot on grill reviews and comparisons. The small details really do make a difference. Looking forward to seeing your review and opinion on the new Weber SmokeFire pellet grill after you've used it for a while. I think your Summit review is on the money. (Monte - from Washington State) Great video, I enjoyed it a lot. Pretty much spot on from my experiences (I've owned the WSCGC for 4 months). Weber is a little illusive when it comes to using lump. It's my understanding you should only use lump if you are going to do low and slow. As for accessories, for me, you have to have a charcoal rake to stir the charcoal and open the deflector plate. I also recommend a large drip pan to cover the deflector plate. I tried using foil only to cover the deflector plate, but a round pan that can catch drippings and hold water works fantastically. I purchased a round 17" x 2" cake/pizza pan, works fantastically. Love this grill!

Thank Monte, Weber's views on lump are very unclear. Some customer service people say they don't recommend it at all and something think it's the best thing since sliced bread. My guess is somebody figured out lump charcoal was causing the bowl to craze and the plastic lid bails on the performer to melt so they now say they don't like lump...but the irony is their cookbooks recommend it for high heat cooks. They need to get their message straight and stick with it. Justin

I have the Weber Summit charcoal grill center now for 5 years, absolutely still love it, I would recommand the rotisserie from spit on fire, the weber wok, weber sear grate, weber pizza stone, a dutch oven , cast iron pan, a griddle, a perforated meat / veggie tray, the weber connect thermometer, thermopen mk4 or one. And still following your channel Justin.

I'm a life long Weber guy I can put up with leaks in a 26" Kettle. But for the price of that Summit I don't expect leaks. Perhaps if the lid was heavier like a ceramic it would seal better. I'll pass for now.

You shouldn't have lid leaks on a 22 or a 26 unless you have dings in the rim, or the bowl/lid are out of round. If out of round you just measure diameters in several directions and "hug" the bowl/lid to correct. Dings take some further measures like gasketing.

I have a Metal Char Grill Akorn and you mentioned that there is a danger of dirty smoke which I have had an issue with especially when trying to cook at low temps. This happened to me and had difficulty maintaining a low temp say 215 F. So I just cut my load of coals by ½ and the issue went away. Just wanted to make this statement in case other are having the same problems. I will eventually get a ceramic but still saving before I shell out all that $$$$! I second that. If you just put 15 briquettes in an Akorn you will be shocked how long it will burn. Over fueling is a problem.

With respect to the smoke leak you talk about in your one-year video, perhaps this will help seal/reseal your lid to the kettle. Loosen the four cap nuts at the top side of the hinge. Once loose, you can slide the lid of the unit back and forth with the effect of centering the lid side-to-side on the kettle. I had the same issue with my Weber Kamado and solved it in this manner. Great detailed review. Weber made a good stab at it but for 2k they could have done a lot better gob. I have cooked on ceramics for 25 years. They are awesome but they do have their issues. I bought a chargriller Akorn and love it as well due to its light weight and no ceramics to crack or replace over time. I recently went to a RecTec Stempede stainless steel pellet grill and have never been happier. It has a great WiFi controller built in with two meat probes. Using Jack Daniels charcoal pellets gives me the charcoal flavor I was missing from my kamado grills. So easy to use and so much cleaner than dealing with charcoal. I still have a couple of Primos and the Akorn and use them on occasion.

Yeah, it's a great cooker. I think if the prices were a little cheaper they could take over the market. For some reason, I don't think that's what Weber wants to do. Justin

Nice follow up.Remember they are a holding company and not the same as the original Weber.Their cs has been lacking and as I see it they should have taken care of you by fixing the leak. I agree with you that the roti is very involved.It still is a very versatile grill no doubt about it.Your vedios are most informative so please keep up the good work.

I’ve had mine for almost 2 years and it’s just a great all in one grill. Bought it to replace a pit boss pellet grill. The Weber is just better. Loaded it with charcoal and did an overnight brisket that came out fantastic. Smoked some chicken and sausage the next afternoon while the brisket rested and never had to add additional charcoal (15-18 hour cook). Great smoker for ribs. 3 racks will easily fit. Reverse seared tomahawk ribeyes for New Years…. Perfect! Used the griddle insert for smash burgers, worked great but wish it was a bigger griddle insert. Good for pizzas if you use a pizza stone. Easy to maintain temperature during a smoke. I see people using charcoal chimney’s to start the charcoal but I just use the propane bottle. Super easy and the bottle last a long time. It’s not as efficient on charcoal as a kamodo but it efficient enough to smoke a large brisket or pork butt without adding charcoal. Cleanup is beyond easy. Just remove the bottom charcoal bucket and dump it in the trash.

Another fantastic video, Justin! Although my budget won't allow for a Summit right now, I still really enjoyed your review. Don't know if anyone else caught this, but when you were talking about the little basket that pulls out, there was a little yellow note that said "Keys to Success" and I noticed one of the keys said not to point out your wife's flaws lol! It just flashed by for a second, but that little detail (or should I say Easter Egg) was awesome. And huge kudos for giving Phil a shout out! I connected with him fairly quickly after launching my channel and he is a wonderful guy. One of my favorite channels that I subscribe to. I have watched both of your videos re: Weber Summit Kamado. I really like the Summit, and maybe one day I'll have one subsequent to what I have learned on your channel. I had narrowed my choice of ceramics down to Big Joe. Your info regarding ceramic vs the Summit made valuable points -- one of which I already took into consideration: A Summit isn't going to crack. And, it's much lighter and easier to manage. In your "1 year" video, you mentioned the Weber Smokey Mountain smokers and I gained a bit more judicial insight. I acquired a used WSM 18 as "best all around" of the three, then I scooped a used-one-time WSM 14 for small cooks. I figured that would hold me, since I do my grilling/cooking on my Weber propane grill, which I need to upgrade to a larger one with a sear zone. Your references regarding kettle vs Summit and lots of other info kinda blended in my head, and I realized that I really don't want to "cook" on charcoal. It's nice; it's fun, but gas is much simpler and easier for lots of reasons. So, when I get to the point of smoking full briskets (yes, I know you can drape them to make them fit in an 18"), I'll probably look around and find a lightly used WSM 22 to complete the set. I think in the long run, I'll do better with dedicated purpose-built smokers and a nice, big grill hooked to natural gas. That way, I can stage brisket, butts or ribs, chicken, and sausage across the three smokers for a big chow-down. I believe in purpose-specific tools, so burgers are on the griddle, steaks on the grill and so on. Thanks for all your detailed info and comparative input. It has helped me be honest with myself in determining what I really need in order to do what I want to do -- much like my process with cast iron, carbon steel and stainless steel cookware. Certain tools for certain jobs. Thank you for your time, effort and insight. 🙂

Great vid, and thanks for the follow up. Your Weber CS experience is interesting to me. Just the other day I went casually shopping for a new gas grill (don't actually need one, hehe). I've always had outstanding experiences with Weber, and was very disappointed by their current offerings in the Genesis line. I was always a fan of the heavy cast iron grates on older models, and found out that now you either get super thin cast iron (at least that's what it looked like), or skinny stainless steel grates. In addition the entire grill had a less substantial feel to it. A seemingly knowledgable sales person informed me that the latest line is built in, and imported from China. So it would seem obvious that they are trying to cut down on weight for freight purposes, which means certain sacrifices. I wonder if we've seen the end of the Weber we knew. Anyway... As a side... Also wondering if you have any experience with the Monolith ceramics. Seems they might hold a few small advantages over the Kamado Joe, but struggling to find enough reviews in English to make an informed decision. Thanks again!

I'm not sure why a company that charges such a premium feels the need to cheapen their products in order to squeeze even more money out of it. Haven’t seen many detailed reviews on the Kamado. Been owning one for less than 6 months now. Noticed the enamel coating inside the bowl may have a defect that coating is now burning through and bottom is chipping… not sure if you encountered this.

I watched this video a year ago when I was considering the Summit Charcoal grill. A year later and having purchased one, I’m really enjoying this system. I use it about 3-4 times a week. I’m from Buffalo and it gets really cold in the winter but this grill really holds the temp well. I have the Weber Genesis and std. kettle but the Summit is my go to grill. I only wish the Adrenaline bbq company would sell the low profile SLow n Sear for this. I have one for my kettle and absolutely love it! Maybe now that SNS took over Adrenaline they’ll sell one. I wish I could tell you but you'd need to call BBQ Guru to answer that question. I really depends on if you can get it to push the right amount of air for the Summit without over-powering it.

I haven't spent a whole video on the topic but mentioned it in a couple of videos along the way. The short version of the story is they have a hinge that is built at a slightly different angle. If you have a leak that can't be fixed through their normal protocol, they will send you the replacement hinge and it should fix it. The reason they didn't change out the hinge design entirely is not every Performer has the problem so they would be creating as many problems as they fixed. That's all the info I have because that's all they told me. I know the hinge exists because I'm using one and the leak went away. If you the customer service person doesn't know about the replacement hinge, push a little harder. Hope this helps.

Justin, love the honesty and humor you put into your videos. I had asked you awhile back about getting the summit or 22" kettle and ended up with the 22" kettle. Couldn't be any happier than I am with the purchase. Also purchased a slow n sear, vortex, and Corona system from Sunterra Outdoor products so know I have the ability to cook low and slow, high heat, along with Santa Maria style cooking. Just an all around perfect setup. Of course one can't have too many grills so maybe a summit should be on my list of future purchases. Keep the videos coming. You should get a commission from Weber for this. I had finally decided to add a kamado-style vs replacing my Weber Genesis gas grill. I want to cook year round in MN. Your videos convinced me that good results can happen on a variety of cookers, but I had not even considered this since it looks like just a strangely shaped kettle that is expensive. The lighter-weight and more durable and easier to maintain all check boxes for me. Now I wait until one either goes on sale or I have $1500 I feel I can part with. Great Videos, Thanks!

I am very impressed by the way you speak ! Great informative video, I wish I could afford another cooker but my WSM 18 is fine for now. I took out my water pan and throw a full load of Royal Oak and Kingsford 50/50 and it gets plenty hot to crisp up skin on chicken and sears my tri tip. I put the pan back in to do what its designed to do for low and slow etc. we do more without it most of the time like a barrel cooker. Love your channel and I will watch more videos for sure!

Yeah the WSM is a great smoker...and it will last forever so you you'll probably never need to replace it. That can be seen as either a good or a bad thing depending on how bad you want another cooker. lol Justin

I've been using the Craycort cast iron grates for about two years and I love them. I no longer use the other grates. I also picked them up for the Jumbo Joe. You just have to season them and they should last forever. I also got the griddle plates for them. I highly recommend them. They are a little heavy but they are very well made. I also have the original Slow N Sear. Works amazing. I didn't get a smoker because the SnS works perfect for me. I use a hover rack when I need more space for meat. I'm looking at the Drip and Griddle. Looks nice and well made.

Good review. I bought the non table model. I am not as impressed with it as you seem to be. I've owned it for two seasons . Use it at least weekly year around. IMO the Summit Kamado is maybe better than my 26 inch Kettle with the Slow n Sear but the Summit collects grease every where and is an absolute nightmare to clean. The Summit is a good value but I would not rate it on par with my Big Joe 1st generation which I've owned for 6 years

Thanks for mentioning the gasket issue. A $2,000.00 grill/smoker should not have leaks like that. When you think that they even added a port for the bbq guru, you would think that it would be sealed better. I will stick to my 22” WSM, 26”, 22”, and 18” Kettles and the SnS 2.0 which all combined cost a $1000.00 less than the Summit. You saved me a lot of money!!

Hi Justin, I've been watching these videos for 6 months now and wanting one but the price? Wow, then stopped by my ACE Hardware store today and they had the Summit premium on sale for $500 off. I couldn't resist. It was time to pull the trigger. They are not flying off the shelf so I knew the store was trying to make floor space for other BBQ's. I actually drove away planning to come back the next day then turned around and went back to purchase it. I knew it was the last one.

For the last 8 months I've been jousting with the idea of purchasing a Weber summit, Blaze Kamado or Kamado Joe. I'm still leaning towards the Blaze bc there is no gasket, it's very durable and it looks cool ;-). What say you? Go Hogs!

Very interesting review Justin. Appreciate your honest review. To me.......it still points out that there is not one perfect cooker. Excellent points on work flow, ash disposal and storage. Not so good on wheels/casters, lack of rotisserie, gasket/customer service. You convinced me to keep all of my 10 + different grills and made me feel better about spending the money on the KK. Hi Justin, Have to say, you & T-Roy were the deciding factor for buying my 1st, 18" WSM, last summer. I have made some amazing food and use it whenever I can. I truly enjoy your videos, from the information you provide, to the quality in which you do it, and the humor you use when doing it. It shows your a real dude that cares about what he does. I've heard people say that you only BBQ for people you love. It's too important and takes too much work. After checking some local dealers who didn't stock it I bought from Amazon.... it showed up today and had a few dents and a good size scratch on the lower section of the grill. Called Amazon and they refunded almost $500 with a 5 minute call. Doing a test run now and excited to see what this slightly blemished monster can do!

@@BabyBackManiac having done bbq as a complete amateur for many years I must say this 'grill' is pretty amazing. I've butchered plenty of cooks on kettles and smoky mountains. This thing is set it and forget it consistent. Since I got a refund for damage I burned some of it on a thermoworks signals that confirmed my suspicions. Drinks with the boys and an occasional peek at the app anywhere in the neighborhood. Steady as she goes and pull the butt when the alarm goes off at 203. Porky happiness. A few build quality issues like a loose and stripped hex screw for the handle but I'm happy overall. This thing stubbornly holds temps for days.

the leg sockets are there on the weber performer as well. It's because the kettle assembly is the same as for the stand alone is it for the cart feature.

Great crooking lessons. I have owned Weber BBQ's for years. I am ordering a Summits Kamado but how can I order the the heavier charcoal holder. Also I am pretty sure the new Summits come with rubber wheels. I recheck on this so the are listing to you. Another great take away was the smoke setting at the button where the ash catcher is. I need to read up on that. This unit is has endless possibilities. I also want lean how to fry fish with it. Any suggestions are appreciated.

Great honest reviews Justin and i love what you do for us. I hope Weber saw this and takes notes. Air leaks? on a $2000.00 grill, not sure to laugh at them or be mad! Their bad.

Justin, wish I could post pics as a response to KZbin but here it goes... I blame you for making me buy my Summit about 6 months ago and Of course I still don't regret it. 😜 I agree with most of your comments but I found the following improvements and told #Weber about it. 1) the propane starter is not needed on this "Kamado" as if you leave the top grate in the upper position the flame can't reach it. I decided to remove my starter tube and plugged it with stainless steel hardware. (Now I have more space and just use starter cubes or the flame like any other kamado!) 2) the hanger racks on the right side are really useless since when you need to hang the rack there, it gets in the way of sliding out the charcoal basket! Solution = keep charcoal elsewhere Note: I built a wood floor underneath the grill where I spray painted a wood pot lid holder to hold all me Weber gourmet system inserts! 3) After removing the propane starter dial, I plugged the gaping hole with a stainless steel magnetic hook that holds the aftermarket kamado grate tool (looks cleaner - wish a grate took and ash took was included as well) 4) my lid is slightly off center as well. I don't have any leaks but when the lid closes the OCD in me drags it to the right every time! Finally, the lodge cast iron pizza pan (Amazon) is the perfect accessory to the Summit. I use it for everything today including finishing #meatchurch #holycow sous vide steaks, smash burger, fish, bacon, pizza, etc. (griddle goes on craigslist) Keep up the good work.

it works in the top position...it just takes about 20 minutes. That's why I use my flame thrower as well. This is all great feedback. I hope Weber listens and takes it all to heart. Thanks for the suggestion on the lodge pizza pan. Justin

Mine takes much less than 20 minutes in the top position. Once I light the Snap-Jet burner, I close the lid and open the lid damper. That serves to draw the air through the top and get the flame closer to the charcoal. Works very well that way.

I had a Weber Smokey Mt and it leaked out of every joint every crack... everywhere! It was so bad it wouldn’t cook lower than 275 degrees. For that reason I can’t bring myself to buy another Weber. I guess I’ll have to buy the Kamado Joe but I’m nervous about hinge issues.

That gasket tarnished the Weber brand and probably comes to mind every time you look at your WSCG. On the other hand aren't you amazed at how much food you can cook with one chimney of coals? I do a second batch or put a 22.5 in grate on upside down coal baskets for a second level, plus "basement" beans in a cast iron loaf pan on the coal grate! Great review Justin!

Bbq Mike Garrick he spent 20 minutes praising it up and down, and 2 minutes sharing about a little smoke that comes out. I think it's safe to say he loves the thing.

Yeah, it's a great cooker. It kills me because it's so close to being perfect...or at least as close to perfect as I would ever expect.

Great review. I love all your videos. I started out on some pretty flimsy grills, the "walmart specials". I then needed something I could easily take with us on a picnic so bought a "Smokey Joe" and have been a fan boy of Weber ever since. Their products are simply amazing. 26 years later, Weber only please LOL!!!! I now own the original kettle premium and can pretty much do anything with it. Would love to test and own a Summit, but are a bit out of my price range. Some day maybe.

Yeah, there is a big difference between a good grill and a walmart special. It makes everything more fun too. I remember when we bought our first Weber gas grill...which was our first grill we bought together. I was so amazed that the heat was even and you didn't have to keep moving your found in and out of the hot spots. lol. Justin

LOL!!! Yes, heat disbursement was huge on evenness. To be honest, they had me at the "unwrapping" LOL!!! First I seen, "Made in the USA". Then as I put it together!!!???!!! The craftsman ship was so obvious at the first touch. I was simply blown away at every detail. Brings a tear to my eye just remembering back to my first weber family member. I have yet to own a gas grill. My brother and I bicker back and forth as he owns a gas grill. I argue flavor, he argues convenience. I say, if you want convenience, run to McDonalds and pickup a burger. LOL!!!! However; I must admit, as my age climbs over the years, convenience is starting to sound appealing. I would never tell him that though. LOL!!!!! Also, i've been through a lot of your videos and am trying to get the "steps" to follow for a low & slow brisket cook. Is this about accurate? 1) 3 hours 225 2) 3 hours 285 (internal should be around 165) 3) Foil brisket, return back at 285 temp? another hour and half (internal temp 195)? 4) Place in oven for a couple hours to rest before devouring. Is oven on at all? wont it get cold? Many thanks. Josh

It looks like a good plan to me except pull it when it probes and feels tender...not necessarily at 195. I also prefer to use a cooler instead of oven to hold warm. Wrap it in towels and try to leave it there 2-4 hours if time allows. Hope this helps, Justin
