I understand why they deleted it, but I don't think it makes sense for Sebastian not knowing the star of the show is not there before the show itself starts.

I actually think this scene should have been included. I understand the reasoning but it makes Sebastian loom completely idiotic. What composer/conductor doesn't verify that all his performers are present, especially the star of the show, before starting it?
