That ground corn should be great as it is parched and a native corn. The blue corn from the Navajo is good as well. Cold flower used in Colonial times was parched ground corn which you took with some maple sugar or what today is turbinado sugar followed by water. Actually any parched grain. In earlier texts from other places they said roasted grain instead of parched. As for those eggs, that yoke called for either toast biscuits or some crisp hashbrowns. Always good to cook over a backyard fire. I remember when my dad did it and the last time was over 50 years ago.

2023 for us was the bedroom and kitchen and first year together on paper. Everything outside was miserable. I’m bundled up in our new Hudson Bay blanket wore out. Chris is making Grits from S Carolina to even out the continent and US unity. I found this frozen coneca sausage behind my organic heathy foods And have a hungering for a traditional American breakfast. I made Chris donate our plastic Mr Coffee and this steel pot- steamer to a veteran And family in a motel.. I like our old percolator Lodhe cast iron and French copper better. He’s got the eggs almost there. We will rewatch this together again . Rain is coming in and we’re staying put. Love, Amanda

Good to slow heat that griddle. Broke my first one heating it too fast on a gas stove. My next one has been protected and slow heated…and is still going. Good to spend time with Nick…enough said…you know. Love campfire cooking. Careful cooking with butter on a hot grill…butter burns fast and easy. Sausage sometimes doesn’t make a lot of grease; bacon grease is better anyway. Good to back off the heat, the fire, and cook a bit slower. It ain’t goin’ nowhere. Thanks for sharing…from an old vet, retired in the hills of east Tennessee. P.S. A little camp table build might be something to consider. You’re a good fabricator. Loved your bike trailer rig.

I use my backyard fire pit a lot. It is a semi circle of bricks so the smoke hugs the bricks instead of chasing me around. I cook with a tripod and chain suspending a cast iron dutch oven over the fire. Good video.

Howdy, Pearsons, it is, as usual, great to see you again. Yes, your griddle was too hot for that first batch of eggs. Like you, I always cook the eggs last, because they cool the quickest. But I always cool my griddle after cooking bacon, before cooking the eggs. My egg rings are metal, and I let them heat up for a bit on the pan, then I melt a pat of butter in each ring right before I crack an egg into it. One egg at a time. The melting butter spreads to the ring just ahead of the egg white and helps to keep it from leaking under the ring. Then, when I can rotate the ring around the egg, but the egg doesn't move with the ring, I can lift the ring and the egg stays round and I can flip it more easily.

NICK is on a great journey with meat cutting! People like me rely on good meat cutters and skilled butchers to provide quality hams, bacon, sausage...well everything. I did a lot of those things for myself. I benefitted from my visits to France, where I patronized fine charcuterie shops to expand my horizons. GO NICK!
