I scored it filled and tied it then fridge over night. But you can also score and fridge overnight and fill n tie next day.

Hey John, have u tried this on a rotisserie? Thinking of giving this a go for a cook on the weekend. Been asked to bring pork or lamb to a BBQ. But not sure how ten cracking will go if I have to cook then transport about 20 mins and then wait until other foods are ready to serve together. Will cracking go soft it I wrap the porchetta and take it in an esky for example? Cheers

Hey rod. Yes have done them on the rota. I personally like it better like the video. I would transport without covering and when you get there put it in a (warm) oven until your ready. The crackle might soften a touch but will still be ok. Hope it all goes well. Talk soon. 👍

Rod ask your butcher to butterfly it if you want so you can put more filling into it. Treat it like a book. Then roll it. Not essential but can be done. 👍
