Excellent video, thank you for sharing your knowledge. I smoked my first ever 4lb brisket last night using your pro tips, and some encouragement and tips from a good friend to supplement. It was described as the best first brisket in history... Ha Ha! Thank you Harry. It occurred to me while watching this video that my life is about to change more than I ever thought, now that I have a charcoal pit BBQ. It's true, BBQ brings people together...and being able to make such wonderful dishes to share with friends and family is so inspiring! Happy New Year, and best of luck in 2019.

I thought you only BBQ’d, but when you made handmade Pasta, I am a big fan for sure now. I used to cook all the time for family and friends. I even tried out for Master Chef, and made it past the first wave with my stuffed whole Trout baked in salt crust recipe, with a side of seared yellow wax beans and Arugula. My second recipe was a vanilla creme brûlée. But turns out they care more about someone with a TV personality over ability to cook. They said I didn’t have enough Charisma. That turned me away from cooking for a few years. Since then I have just went to restaurants or ordered food for delivery. Haha With your videos you are slowly bringing me back to cooking. I feel the itch to cook. So Thank you Harry. The content is great.

Seriously, I've given away my food to my viewers who live in Los Angeles including firemen, law enforcement, and medical personnel. I can't eat all the meat I cook as there is 100 lbs a week among classes, videos, and catering gigs. I'll buy some avocado oil and use on my Bisteca Alla Florentina coming up. Thank you for doing porchetta, Harry! Do you recommend another way to get the crispy skin without the use of a torch? Is there any other method to finish the porchetta and get the great crispy texture? I've seen techniques of pouring hot oil on the skin to finish but that is way beyond my comfort zone to do at home.

You can get crispy skin using your oven broiler set at 450F. It's safer than the hot oil method.

Yes Jason, just an outside sear as I just like the Star Wars light saber action with my culinary torches. Cue up Darth Vader soundtrack! How do you think this would compare with doing a longer 6-8 hour cook at 250 degrees? Would it fall apart / not slice well / have too much smoke flavor?

You can use H-n-F, L-n-S, or ultra L-n-S approaches. They all work. Use a bamboo skewer to get to the probe tenderness you desire. Do not use time nor internal temperature

Harry, found your channel few weeks back. Love it. Did my first Hot N fast brisket Christmas, 6 hours and turned out perfect. Picked up a 22" kettle the day before. My gas smoker rusted out and am thinking of taking to the dump now. Question is: Noticed you do not have electric or gas smokers. Not to put you on spot or start 3 hr argument, but ...why?

Thanks for watching my channel. I know there are a ton of cooking channels on KZbin so I'm grateful to you for subscribing. It''s amazing that I'm almost at 30K fans since I started posting consistently in 2018. I cook with gas also but I don't have an electric smoker. The fuel source does not matter after you hit the foil stage so I'm not one to waste charcoal or pellets when I can finish in a gas oven or smoker. If you want smoke flavor and color, you have to fire up a pit. I'm OK on any method to cook including poaching, boiling, and even sous vide so long as you're having fun and spreading BBQ love. I'm thinking of doing a 30K Thank You giveaway when I travel to one of my subscriber's home and cook/coach them through whatever meat they want to cook. What do you think of this idea? How would I do something like that?

Yes, paper and dutch oven is fine and please use common sense after you find and read the actual science article(s). For example, I just found out that sunscreen causes cancer. Sounds sensational? I read the study article and they used donated foreskins from babies and tested the sunscreen using artificial light the foreskin on a petri dish in a lab and concluded that the sunscreen caused precursors to skin cancer cells on the foreskin. Voila, so sunscreen is likely to cause cancer then. After I stopped laughing, I decided to keep using sunscreen. What got me is that foreskins don't usually get sunlight! LOL! Muahaha!
