Love my Masterbuilt 560 - couldn't be much simpler to use once you get used to the process of starting it up. I tell friends it's like the convenience of a gas barbecue but with charcoal flavour that you always miss on a gas grill. And it's great for low and slow. Oh and I also use it at max temperature for pizzas on a pizza stone and they come out great.

Just got a Traeger Ironwood 650. Pellet. Would you say the master built using coal and wood has a better/different smoke amount to a pellet smoker? Desperately want an off set, but I chose the pellet smoker due to time it takes tending to an offset. Would the gravity fed give me a similar smoke to an offset? Granted I know nothing will beat an offset for smoke and cook quality

You hit the nail on the head with the Masterbuilt. Perfect if you have kids in the garden. You can set and forget if they're constantly needing attention and you don't have time for fire management, plus the outside doesn't get too hot if they accidentally touch it. Genuinely think they should market it to parents with young kids. Then switch back to an offset when they become teens. I love my 560 but agree I'll probably only swap it out for the 1050.

Can you compare the taste between masterbuilt gravity vs offset for a brisket and pulled pork?

I personally can - i think anytime you use charcoal as the main heat source, you get a different flavour to pure wood. But, more importantly, its a different sort of combustion. With the masterbuilt, you're obviously smouldering wood chunks for smoke flavour. With the offset, youre burning straight wood at a pretty clean combustion temperature - which isnt that noticeable until you're doing a 12 hour brisket cook. I also think the bark is unbeatable in an offset. Cant beat the taste, appearance and texture a real fire creates! still love my MB for sausage though!

Ha I think you misunderstood. This was about what I personally use my grills for. I’ve cooked many low and slow meats on the weber. It’s a great bbq. One of the best there is. I was saying I only now use it when I have a big family gathering and I need more space for cooking. The comment about what I cook on it was a joke. And I agree - doesn’t matter whether I use my pk or my weber for smoking meats. Still great bbq. I just prefer the shape of the pk so the weber gets less use than it used to

No not at all. Not taking the p. Just much less to talk about with it as I really don’t use it anymore due to the other options. As I say, it only really comes out now when I need to increase cooking capacity. Also, as I mentioned - I never bought it myself, my wife already owned it when I met her. So less connected to it! My first bbq was a super super cheap eBay offset. Pretty much made of tinfoil and impossible to use.

So if you had to pick one to use for personal use, not for business, which smoker would you pick? Also what is your opinion on the Franklin Smoker? Does it work as well as advertised? I know price is high but I have been on the list for almost a year. It seems like a buy it once and be an end game smoker for a back yard pit master.

Probably the Smokeyoak 100 gal. I just love how easy it is running bigger smokers. If not, it would be the Franklin. I love the franklin - it works better than advertised. You likely won’t have ever cooked on a pit with such good airflow. And that makes fire management an absolute breeze. But, I’m sure there are some pits out there that are as good, bigger, and for the same price. I agree - it’s a lifetime pit. You won’t ever need a new one unless you want to upgrade on size. It’s a beast. Also, I’ve no doubt one day they’ll either stop making them or they’ll get cheaper built. Will be nice to own one now, while they’re hand welded by Aaron and his team.

The stack on it is completely undersized. It creates no draw, so fire management is unnecessarily difficult and inefficient. All they’d need to do is increase the volume and the height of the stack and it would be a great cooker. Even with all the poor feedback they’ve had on it, they still won’t make the simple change, but rather watch and see all their customers pay for mods to make it worth owning.

Thank’s! It has a smoke stack way too small for the unit itself. It doesn’t draw nearly enough air through the unit, so it’s harder to keep temps stable, and it doesn’t do a very good job of keeping the coalbed hot throughout a cook. All they’d need to do is re size the chimney so it creates more of a stack effect and more draw and it would be a much better cooker. And it’s so expensive!

Not that I’ve ever used one, but I’m not a huge fan of the idea of a reverse flow pit. I like a tonne of convection so the traditional standard/horizontal flow pit is what I like - so I’ve never given them much thought!

Nice vid and collection there. Nice to see UK vids coming up more too. I notice on your other videos you mentioned oklahoma joe and a cactus Jack offset I'm guessing those got replaced with the two offsets you have now. I'm looking for an offset to join my collection, so far I've got a kamado, WSM, weber kettle and a traeger but I want to venture into offsets. How would you rate the previous ones that you had? (as they're both on the more affordable end for giving it a go sort of thing)

I loved my oklahoma joe and cactus jack - the ones i have now are in a completely different league to the OKJ. That is a starter smoker that will do you well for a good few years, but you will likely outgrow it if you get 'more serious'? about offset cooking - its designed to be more of a charcoal + wood smoker. Rather than a wood split smoker. But its great - i always recommend it to people for first time offset buyers who maybe dont want to be investing a load at the start. The cactus jack is more in line with what i have now - super thick, great airflow and may outlive you! My advice would be to get the 20" version. I'd happily have my cactus jack now if it wasn't for the Franklin pit.

Absolutely. Especially the 20” version which has a new improved stack size. Great pit. I’d own one again for sure. But I’d go for the 20” over the 16” which is what I previously owned

Not yet. Some of them have bought bbq from me! If they ever say something, I will certainly cut back. I’m always very conscious of things like if they have washing out to dry. I’ll avoid cooking. But so far, no problems 🤞
