A lot of the time the camera is on the chefs face and not on the food or showing the process. I wish the camera can be on both at the same time. Making it easier to see what the chef is doing.

People are becoming so obese in barbados its difficult to see this chef is on her way to having a stroke I am not a dr. But my own sister at a very young age died from a stroke eating this type of food including barbecue pigtails no more said, I hope she does something about her health

I enjoyed this episode. The experiment and comparing of how each is different in texture and taste was great to know.

When she put in that pig blood I almost vomit and when she was washing the intestines I was wondering if feces was in it 🤢.Anyways I read that the slaves in Barbados made pudding and souse this way because they only got the scraps from the pig ( feet ,ears ,tongue intestines and blood). But I dont think anyone should be using pig blood in this day and age when you have browning and I never liked the idea of using shit tubes .🙄 But dont get me wrong I love pudding and souse as a matter of fact I just made some. No blood or shit tubes included.

The blood stiffens when cooked ... but so too corn starch and food coloring

Do people still use Pig's blood, that is very unhealthy. You have other choices like natural colorings and white pudding should be just as good. You could just steam the pudding instead of using that "belly".

No one should eat anything with pig blood. This is nasty, my mom always grated a beet put it to sit overnight what a beautiful color or you can burn sugar black like for fruitcake and use it

Clear away the bowls you no longer needed. It would be more comfortable for you and the audience to watch you do the next stages.
