One of the many things I love about this channel is that Chef John doesn't just give us what we ask for, he invents new things that we never knew we wanted. He could have just brought his personality to the classic recipes, but getting to see his unique creations (and even his failures at times!) in such a polished format really means this channel is unlike any other I know of.

That looks great. I like the way you said to put it in the center of a “very hot 450 degree oven” - is there a very cold one ? You could also combine that mixture with some par-cooked penne and create a nice baked chicken parm pasta dish as well. John is becoming the Dr. Chef Frankenstein of the Food Wishes kitchen.

Chef John, I just want you to know that I have watched and loved you for years. I now live in the Bay Area- I think you do or did too. Anyway my husband and I absolutely love you. I made this last Sunday, last minute, using a straight out of the rotisserie, store bought bird. I used a block of cream cheese and hey wat can I say, it was awesome. However, for maximum results, make this a day or two ahead of time! It gets better with age. The texture of the chicken softens up and becomes one with the cheese into a fused dip. Doing the buffalo wings in a jar this weekend. Thanks CJ!

I received my Masters and Doctorate degrees in Dip Science and can attest that Chef John is correct that you should try both ricotta as well as cream cheese. In fact, my colleagues from Philadelphia booed the ricotta dip. But they even booed Santa Claus.
