This is now known as the yellow cookbook in my house and comes out once a week. What you don't see in these videos is how many 15-20 min meals there are. I can throw together dinner so quick and it is so good. 15 min squash and kale really took 15 min. I'm going to make the ragu for my husband's bday later this month.

YAY for broccoli stalks! If you peel off that tough, outer layer, which is kind of stringy and yuck an will totally turn you off to broccoli, those stalky innards will turn you back on to broccoli. So lovely and tender and scrumptious! Yummy!

My daughter and I gave each other your cookbook - unbeknownst to each other! It has been so fun watching your videos. We made your Cacio e Walnuts-with pistachios -and the whole family loved it! Side note: did anyone else cringe in shame as she was plating, stating the option to let others top individually….. ma’am. I was ready to eat the whole platter!

great recipe, thank you! I will be making this soon. re: unsalted butter - I think it's pretty unlikely the saltiness of the butter is going to be the straw that broke the camel's back. Surely I chose a silly metaphor to launch with, but I'm 100% confident of this in polenta, and I'm 90% confident in baking. Salted butter is AT MOST mildly salty.

Completely agree with you on the unsalted butter. I, almost, 100% of the time use salted butter in every recipe that calls for an unsalted one, and I never had a dish or baked good that ended up too salty.

@@laspinas1986 you can use salted won't kill the dish unsalted is what I personally prefer using cause it gives me more control over the salt levels of my dishes. Really just season for taste and stuff will be fine 99% of the time anyway

Unsalted is the standard in recipes not just for controlling the salt level but because the unsalted has historically been slightly higher quality--not sure if that is still true today

For risotto, I’ve used nutritional yeast + soy sauce to replace Parmesan and it worked really well. The texture is a little different without the cheese, but still really good! And it tastes pretty much the same. I bet it would work here too!

Question: presumably some of the broccoli and garlic flavour infuses the blanching water. Could that not be used to cook the polenta in? I have an inability to throw anything away. Thanks!

I imagine you can use a ladle or two of the broccoli water for polenta. Anymore would probably be too salty.

I agree with mrjackfrost-the broccoli water is HEAVILY salted. The broccoli comes out fine because it’s a quick dip, but the polenta would absorb all of that and be inedibly salty

Sometimes I can't help but wonder if you choose cruciferous vegetables for your recipes just so you can say 'cruciferous' in the video. I've never been much of a broccoli fan but this recipe makes me think I should give it another chance. Would walnuts work instead of almonds?

Had you kept the broccoli water to cook the polenta in, you would have retained the lost vitamins, and increased the flavor of the polenta itself.

So I try to live and let live, yeah? And I feel very much that, so long as it doesn't involve children or animals, your kink is not my kink, but your kink is okay. But for real, khaki colored floppy broccoli is a bridge too far. I feel that because I grew up on khaki colored floppy broccoli, and it was my favorite vegetable, that I know of what I speak. Khaki colored floppy broccoli should not be the planned outcome. I'm still a huge fan of broccoli. I even like floppy broccoli. But it must be somewhat blackened, and still bright green, for that to be good. I mean, I would happily eat this recipe if you'd just left the lid off.. Still, if that's how you like it, then I hope you've enjoyed it. To each their own.

Parmesan is not technically vegetarian because a substance called rennet, taken from a calf’s stomach, is used in its production. Grana padano and Gorgonzola both also contain calf rennet and so cannot be called vegetarian :)
