We all love caramel but it is tricky to make. I decided to put together some tips and tricks that have helped me over the years. I also share a simple yet amazing recipe to make the best caramel sauce, that will blow your mind away.

This caramel sauce will thicken and become sticky when you keep it in the fridge. This is because the butter and cream in it becomes firm. Before using it, microwave it for a few seconds.
Even after setting this caramel wont become hard.

Great recipe! After getting it wrong once, made it twice already. Couple tips that worked for me that I did wrong the first time (in addl to the ones in the video) - 1. Pop the granulated sugar in the mixer and get it powdered. It accelerates the melting time soo much (also easier to use otherwise) 2. Let the pan heat on medium -high flame before you add the sugar 3. Medium flame worked better for me. On low flame, the sugar didn't melt, but just came together as a one solid form. 4. Add tonnes of cream! The caramel hardens as it cools down, so add more than you think you want.

@@ummeyfarva6526 it's fine if it hardens after it's made. You can put it in microwave for a minute to melt it again

I love the way he actually explains each and every step unlike most people but one thing that caught my eye was that he used a wooden spatula to mix the caramel. Wooden spatulas have more bacteria in them compared to a regular spatula and he also mentioned that the equipment used must be clean. So I would recommend using a silicon spatula when you try this out. But in the end, this is a great recipe and I would definitely try it out.

I literally burnt the sugar when I was doing upside down pineapple cake. ... All ur recipes r super elaborate and easy to understand. While doing such delicate recipe pls mention the time how long we need to boil or how many last mins on stove.

It may take anywhere from 8-10 mins; you just want it to be light amber colour and have your cream and butter right next to you as you caramelise the sugar because it’s better to be prepared than rush everything last minute because the sugar keeps on caramelising even after turning the stove off. You also need cold butter and cream in the caramel to halt the cooking process. Hope it helps.

Your videos are amazingly helpful..I have started baking since a few weeks..tried your whole wheat choco chip cookies, coffee walnut cake and both were just amazing..the minute details that you give in your videos helps so much, like when to use melted butter and when to use soft butter..feels like I'm getting baking classes for free..!!! I tried making caramel yesterday with the same ingredients but I saw a different video and I ended up with a bowl of hard amber coloured brick kind of thing because what I did was: 1. Didn't add water to the sugar 2. Stirred the sugar (a lot ) while melting 3 Added less cream 4 Cooked for longer time (BTW yesterday I didn't have a clue for where I went wrong and after watching your video I got to know that I was wrong a lot) I am surely gonna try this caramel cause I loveee caramel😍 and it's a request shivesh can you please upload a video on how to make coffee caramel cake cause my mom's birthday is coming so I wanna make a cake for her and she loves the combo of coffee and caramel . I hope you take the suggestion 😁

Very good guide for making the perfect caramel sauce .. thank u so much for the detailed instructions and tips.. it helped a lot .. my sugar had crystallised twice.. I added the lemon juice as u suggested and it stayed fluid.

I am really overwhelmed by you and how the way you cook💯❤️ .. sir i wanted to as you one thing, that i made the caramel sauce just as the way you have mentioned in the video... but I don’t know my sugar got an amber colour as you mentioned the condition in the video.. but then I remember that I didn’t use warm cream... i used it simply... and I don’t know the caramel sauce ended up being gooey and now it got froze..! Please do help me out with my mistake, thank you..! Much love❤️

My sauce got thick after 5 mins while i was frosting.. again i tried to boil .. but by the time it cools down .. gets too thick for dripping??

Very nicely detailed video but one thing I’d like to add is; if possible use a light coloured pan instead of black so you can clearly see the extent of caramelisation.

Hi Shivesh Your explanation of methods is very thoroughly and I like that You have explained preheating of oven and microwave. The microwave showed in your series is very sofisticated, I have a simple one of LG there are cook functions given . But I do not enjoy baking as I end up with over or under cooking. Please guide me so that I can be a good baker.

Shivesh though the texture was rich & intense but I didn't get brown amber colour In fact I waited but some sugar crystallised I took the batch added cream , butter after following ur recipe & the texture was fine ....

Umm...my attempt to make this caramel sause didn't go well. Usually in our house holds, we don't have such brushes in the kitchen...so I put few drops of lemon juice into the boiling sugar, water mixture. Since I didn't have fresh cŕeam with me, I had to use normal milk! As you can guess when I poured milk into it, the milk did split and became paneer in caramel flavoured slurry. It was literally milk solids in a brown colored water. Immediately, I dissolved 1 spoon of cornflour in some water, poured it into that mess and cooked to make it thick. That worked. And I was left with wet caramel sauce with tiny paneer crumbs in it. Fortunately, it didn't taste bad then. I used it in pudding, don't know how it will taste...'cause it's still in the freezer. Major lesson here is that never use lemon 🍋 juice in milk desserts unless it's sweets like rasgulla or rasmalai....

Hello Shivesh. Firstly loved every recipe in your bake with Shivesh book. Secondly just a suggestion plz show us things like these as it’s very useful during this lockdowns as we are not able to get anything delivered. Please do videos on basic rose essence and such kind of videos. It would be very very helpful. Thanks.
