For almost a year now, I have been playing around with baking sourdough and while I’m not fond of the stretch and fold, mainly because I forget, , I have discovered the best way, for me, to make sourdough and it’s completely in the bread machine.

So first things first. Before I make my bread, the night before I will take about 30 g of starter from the refrigerator put it in a bowl and I’ll mix it with 110 g of filtered water, or water that I filter from my refrigerator and mix it with 110 g of jovial flour. Mix that up, put some plastic wrap on top and then just put it in a warm spot overnight. Then I take it out of the warm spot remove the plastic wrap and I see a lovely bowl of bubbly sourdough starter  and then I’m ready to bake bread the next morning.
For this recipe, I use a half a cup of sourdough starter
450 g of bread flour
Half a stick of melted butter, unsalted
1 1/4 cup of water
In about 3/4 tablespoon
2 Tablespoons of sugar
Put all of that into my machine, knead it two times
Bake it for 1 hr and 10 minutes. It makes a great loaf for sandwiches and I hadn’t didn’t have to do all the stretch and folds. The bread machine did it all.
