hello! I'm 'Baking Again Today'. 😊
Today, I made Marron Glace, a luxurious chestnut dessert. Candied chestnut dessert without removing the inner skin.
I also made Marron Glace paste, balm paste, and balm compote. These are things that can be useful in many ways in baking.
Also, to make a video, I've included tips for picking out bug-eaten chestnuts or rotten chestnuts that I learned while peeling hundreds of chestnuts, so please refer to it!

🌰 Marron Glace 🌰
Chestnut ( I used 1.5 kg chestnut. )
50% Sugar by weight of peeled chestnuts
1 to 2 tablespoons of baking soda
water
🌰 Marron Glace Paste 🌰
You can collect chestnuts that burst while making marron glace, grind them in a food processor, and then use them by lowering them through a sieve.
🌰 Chestnut Paste 🌰
Cooked chestnuts
Dark brown sugar 50% of the weight of steamed chestnuts (I added brown sugar for the color and flavor of chestnut paste. It can be replaced with white sugar or light brown sugar.)
Water 60% of the weight of steamed chestnuts
🌰 Chestnut Compote 🌰
Peeled Chestnuts
50% Sugar of the weight of chestnuts
water
◼ How to store ◼
Put marron glace and chestnut compote in a sterilized glass bottle with enough water to fully submerge in the syrup, turn it over and hold the vacuum, and it can be stored in the refrigerator for up to 6 months. (If not opened)
If marron glace or chestnut compote is not submerged in this syrup or the glass bottle is opened, it can be stored in the refrigerator for up to 10 days. For frozen storage, remove the syrup and subdivide it in a ziplock bag and store it for up to 3 months.
Marron glace paste and chestnut paste can be stored in the refrigerator for up to a week. Or, divide it into small portions to use in a ziplock bag and store in the freezer. (Stored up to 3 months)
