This simple and delicious yule log recipe is a real Christmas treat. A beautiful light yule log cake for xmas. This is how to make it and all of the baking ingredients you’ll need.
For the cake
3 eggs 0.39
75g / 2.1oz Caster Sugar 0.12
25g / 0.8oz Cocoa Powder 0.25
½ tsp Vanilla Essence 0.06
For the icing
50g / 1.7oz Dark chocolate 0.33
25g / 0.9 oz Butter 0.19
25ml Double Cream 0.08
For the filling
100ml Double Cream 0.38
1 ½ tsp Icing Sugar 0.04

Separate the eggs.
Whisk the egg yolks and sugar together until smooth and creamy. Add the cocoa powder and vanilla and whisk again until well combined.
Whisk up the egg whites until stiff, add 15g of sugar and wish into the egg whites.
Combine the egg whites with the yolk and cocoa mix and fold the two together.
Line a baking tray with greaseproof paper up and over the sides.
Pour the cake batter into the tray and level it out.
Bake in an oven at 170c / 338f / gas Mk 3 for 10 mins until the cake is just firm and springs back when pressed.
Let it cool a little and then roll it up in a clean tea towel and let it cool completely.
Melt the chocolate and butter and stir well together.
Let it cool a little and then add the double cream and whisk to a smooth consistency.
Whip up the double cream until it thickens (but not too thick), whisk the icing sugar into it.
Unroll the cake and lightly spread the cream filling over it. Roll it back up.
Cover it with the chocolate icing.
