Sweet Mince Pies For Christmas - And Icing The Christmas Cake.

Thank you for encouraging 19:38 traditional Christmas baking. It's so much better than just going to the shop and picking it up from the shelf. As a child, my old great aunt used to come for tea one night in November. After tea, the dining room table was cleared, and the pristine white table cloth was loaded with a mixing bowl, scales, and numerous packets Aunt Annie would dig out her old cookery book, and the mixing would begin. I was always given a chance to stir the cake. The house smelt wonderful as I went up to bed. The kitchen was warm and smelt wonderful. I was so lucky to have so many of the older generation about me growing up and passing on their skills. They were all wonderful cooks and gardeners. As a family of 10 children, they had always been as self-sufficient as they could be.

@@sukigrice1841 I can relate to that, as when I was in my early teens, every Sunday during late Summer and into early Autumn, my Dad and me used to take flowers to my Grandparents grave, then on to the lanes for some foraging, Blackberries mainly, whilst Mom was home preparing the cooking apples for the arrival of the blackberries. Along with her Short crust pastry. None of the 'pre-made' around then, and what an aroma. When we had visitors at the door, they caught a nose full as soon as we opened the door.

hi afain from Australia. As per usual your cake is amazing and love the thickness of the icing. Your family will love all that you prepare for Christmas. They are so fortunate to have a father and grandfather who enjoys baking. I will always give you praise for not having all the kitchen equipment we have these days. I would always only use caster sugar in my pastry when I started cooking. Never tried icing sugar. I wish you a merry Christmas and a Happy New Year. I will see you again in 2025.

I have never had the courage to make a Christmas cake but now I am definitely going to do one next year. My late Jamaican mother in law used to have a huge jar of mixed fruit soaking in 100% proof white Rum which I now do..my question is can I use my Rum soaked mixed fruit instead in the cake..?? Ah, you have me confused just a little bit. In the description of this video *and* the one where you made the filling you wrote 200 grams of flour. But in this video you mention 250 grams twice. Can you please tell me which one it is? It's my first time making this and I don't want to mess it up.

Yes, I noticed that , in my experience of baking, the ratio between flour and fats is double, so the fats are 120gr on this recipe……So I would always double to 240gr of flour. But if a pastry is meant to be extra short &flaky , you would use a little extra fat compared to flour…. Both would still work out fine.
