Ingredients and Measurements:
4 tbsp. oil
2 tsp. geera/cumin seeds
1 medium onion chopped
2 scallions chopped
3 leaves culantro chopped
3 tbsp. curry powder
2 tbsp. masala
2 tsp. geera/cumin powder
8 cloves garlic crushed
6 wiri wiri peppers crushed
1/2 tbsp. tomato paste
2 tbsp. green seasoning
salt to taste
3 japanese eggplants peeled and sliced
4-5 small eddo peeled and cut
water to cook
