Waco is pronounced with a long A like wave, bane, and cane. I feel like I can say that with confidence since I live here. The Balcones distillery is a very nice place.

Texas whiskeys can be manipulated to age much quicker due to the extreme heat. The secret of aging comes from barometric pressure, in Texas, those pressures can vary greatly. A two month aged whiskey can have the same intensity and complexity as a 5 year whiskey elsewhere.

If you're familiar with Texas barbecue, my friend said: "Drinking Brimstone is like drinking a well smoked brisket...."

Brimstone is a niche product, but they produce several other whiskies that are quite excellent. They have a single malt, and now a peated single malt, which are well received. Both are big, robust whiskies unlike the more delicate single malts of Ireland and Scotland. They produce corn whisky, some of which have been very nice; in general, the higher the ABV, the older the corn whisky in the bottle. And they have a bourbon which is well made and affordable - about 35 to 40 USD here - as well as a similar rye that would improve with a little bit of aging, IMO. Once tasted a version that was never bottled, which Chip (the colorful founder) joking called a "crooked bourbon" (as opposed to "Straight Bourbon") which was created by using instead of a mashbill of 51+% corn and rye and malted barley, a vatting of more than 51% corn whisky, plus rye distillate. and barley single malt - and it was really pretty good, too! They do really nice work. They're one of the better distillers in Texas, which has a lot of competition now. But all their products lean to the big and robust style.

Scrub oak is a smaller, shrub like oak tree. Usually will not exceed 15-20 ft tall and thinner than average branches. Native tree to Texas. We use it a lot for smoking meats. And Waco is pronounced "way-coh" lol.

Nah, it's pronounced "WHACKO" like most of the residents of Texas ;)

I live in Texas. Whisky making has taken off. In part because of the whisky boom but also we are able to mature whisky much faster because of climate. What you need 12 years for in Scotland you will find only 2 or 3 years is needed here. And we have lots of oak variety’s . Some balcones whiskys are really good. Not all but a good few. Also it’s (Weigh coe)Waco

Also, if you're looking for the best Balcones has to offer, in my opinion, try the Texas Single Malt Single Barrel. It's extremely high in abv, a teaspoon of water or two is recommended to bring out the more subtle flavors.

Hi Ben. "way out", agree! The smoke was towards fireplace ash in the batch we tasted earlier. Either love or "no more" totally different. Really appreciate your videos.

Agreed, purchased in a panic bc my wife was pushing me to hurry up. Had no idea and the "blue corn and scrub oak smoked" description sold me. "Way out there" is way understated.

You should definitely try the Balcones Texas Single Malt, and Balcones Peated Texas Single Malt. Both use Scottish barley.

This one tastes exactly like a “whiskey and coke” cocktail, it smells like cherry coke. I really prefer this one on ice rather then neat, but they neat definitely is a experience with this one😂

I've tried a couple of different Balcones. You either love or hate this stuff. There is no middle ground with it. I get a tequila taste on the finish and can't get past that.

Could you please do a Crown Royal Black review? I personally love it, but I am in no way a whiskey expert and an overall wuss when it comes to alcohol. I'd would love to hear what someone like you thinks of it.

I think this smells like Huberds Shoe Grease or Pine Tar smell. It's pretty good stuff, but you need to be an experienced whiskey drinker to enjoy this.
