You don't really get a choice to, SOMEONE has to be a mind flayer in order to continue. Whether that's the Emperor (If you want the bad ending I guess?), Orpheus (If you want another bad ending.) yourself, or Karlach as she'll offer to do it too.

Because the Emperor is a little bitch that's why. He's like the Elon Musk of the sword coast. He thinks he's right and everybody else is wrong. He thinks he's the only saviour of the realm and nobody else is up to the task. Ofc Orpheus immediately proves him wrong by casting anger aside and siding against the greater foe while the Emperor just says "aite let's see how you fare without me"

Both. It's in the endgame, after getting all the stones and it affects the Orpheus quest as well.
