Laping is a popular Tibetan street food made from wheat flour(maida) The dish has a jelly-like texture and is often served cold. It is garnished with chili oil, garlic,steam gluten and spring onion. The laping is sliced into thin strips and served in a bowl, creating a vibrant display of colors and textures. The translucent jelly strips are contrasted by the bright red chili oil, creating an enticing visual appeal. The dish is served on a simple plate, allowing the vibrant colors of the ingredients to shine through.

Ingredients: Maida Active dry Yeast Garlic Chilly paste Spring onion Dark Soy sauce Light Soy sauce Roasted Sesame Seed Sesame oil Ajinomoto White vinegar Turmeric Noodles Peanuts/Chips/Dalmoth Process Knead the dough Add water to it and let it soak Then wash the dough in the same water Separate the starch and gluten Put the gluten in a separate dish Let the starch set for four hours (if humid fridge is recommended) Add half-teaspoon active dry yeast to the gluten Cover it with a wrap and leave it for an hour Now start making the sauce Take one tablespoon of beaten garlic Add salt according to the taste and mix Take some chopped spring onion Add two tablespoon chilli paste Add two tablespoon dark soy sauce Add one tablespoon light soy sauce Add Two teaspoon Roasted sesame seed ½ teaspoon ajinomoto (completely optional) Add 1 tablespoon sesame oil (optional but recommended as it enhances the taste) 2 tablespoon white vinegar Mix well Add water to your estimation Voila!! There you have your Laphing sauce Take your gluten and steam it for 15 minutes Then let it cool down Slice the gluten in small pieces After 4 hours, your starch would be ready The water and starch would be separated so drain the water. Add a pinch of turmeric Take a plate and brush the oil into it Stir the starch well Pour it in the plate (make sure to take the right amount And steam it in a high heat After 3 minutes Laphing base is ready!! Carefully strip the steamed Laphing base from the plate Now make a Laphing of your choice (dry or with sauce) Spread a chillipaste in your laphing base Add the gluten pieces from before Then add a noodle of your choice Add peanuts if it's preferred (or chips, sausage anything you want!!) Now roll it like you roll rolling paper ;) !! Then cut it into pieces And there you have your DRY Laphing Just add the Laphing sauce on top of it if Soupy Laphing is preferred.
