I freeze over ripe bananas and use them when I want to make it. The cake comes out darker but just as delicious. A touch of cinnamon is nice in it.

I've been doing the exact same thing for a while now, and let me tell you, THIS IS WONDERFUL. It's sumptuous, and fills your whole room with an amazing aroma. A very good use of bananas. Edit: Okay, maybe not exactly/. Haven't tried adding rum yet though. Wonder how that'll taste. Anyway, I definitely recommend this recipe to everyone.

I love banana bread! One time I made a round banana cake with a similar recipe with added chopped chocolate. When it was cool I devided it lengthwise and filled it with chocolate cream and put chocolate cream om the top. It was very good, everyone said so. Banana bread can also be frozen for up to tree months wraped in aluminium foil.

This banana bread is totally different from the usual US banana bread, which is very dense. Although I used half whole wheat pastry flour and half all-purpose flour , it still came out light and soft. Thanks,Chef and Francis!

Thank you for teaching. I reproduced your recipe and the result was "perfect". Very aromatic and tasteful. The difference was the sugar. I used the white regular sugar. The time and temperature also perfect. 170C for 50 minutes. The amount of sugar, i prefer half. About 50g.

i just made this, word of advice: if ur using an old oven that youve had for years or live in the states, try setting the oven to 410 to 450. 350 was way to low for me, otherwise, this is an amazing recipe and the bread taste awsome!

If you use all purpose flour in this recipe, I would highly suggest reducing the flour to 160 grams, and adding in 10 grams of corn starch the make up the total 170 grams.

Nakamii13Elf it hads fluffy texture, corn startch is lighter and airy. flour is very heavy ! i always replace a part of the flour in cakes with like 20% corn startch (80% flour). it's just make a lighter texture and more bubbles. not at "thick" when you eat it

Nakamii13Elf As Sakuems said, it makes the flour mixture lighter, so the end product if fluffier. It's a common substitution for cake flour. Either replace 1 tbsp for every cup of all-purpose flour with corn starch, or replace 8 grams for every 120 grams of all-purpose flour with corn starch. Or just buy cake flour, it's easier. ;)

This is almost the exact same way I made banana bread with my sister and my babysitter when I was about 5 years old. The only difference is that we used mushy bananas, which made the bread come out darker with a more gooey texture.

It is very funny how regional preferences, perhaps family preferences affect the recipe components. Here in the US there might be 30 variations on this recipe. All are regarded as absolutely necessary. But, that is not really the case. It is just what one is used to. Lovely show, I enjoy it greatly.

Yum! and before those comments come, Chef was using the word Cake (ka.e.ki) instead of the word for bread (pan) because generally banana bread is more like a pound cake than a single individual bread like food.

I notice chef used very ripe bananas with yellow skin and black spots. I used ripe yellow bananas and it was still a bit hard and difficult to mash for me, would try with riper bananas next time. The bread turned out really delicious, this is the best banana bread recipe I've tried so far.

When I make banana bread I use vegetable oil instead of egg, and it makes the bread super soft and moist!

HA! This just proves what I was saying last year about Banana's! Some TV show said that Banana's had been banned in Japan, but I found nothing on a ban or a lifted ban at all anywhere! If my late mother was still here today she would have seen I was right all along, though I figure she did believe me anyway but I like to have visual proof about news shows getting it wrong. I love Banana bread! Regular or candied chopped walnuts taste great in it! Unless your allergic. I've seen seen banana chunks put in too! Good thing I already had my dessert tonight!
